Our scientists don’t stop once a food standard is developed.

Science also helps build the evidence needed to understand emerging issues in our food supply and support the food regulation system.

Through activities such as food surveillance, data analysis and risk assessments, scientists help identify emerging issues, understand potential risks and build the evidence needed to support policy development and decision-making.

At FSANZ, science helps us understand trends, monitor the food supply and support coordinated responses to new and emerging challenges.

What does food science actually look like?

It often isn't a lab coat and microscope.

It can involve reviewing scientific evidence, assessing food safety risks, analysing data and consulting experts from around the world.

At FSANZ, we assess the latest available science, undertake rigorous risk analysis and consult with a wide range of stakeholders to develop or amend food standards. This helps ensure that the decisions around food standards are informed by research and evidence, transparent and open to public and stakeholder input.

This National Science Week, we're celebrating by exploring the science behind the standards that ensure Australians and New Zealanders can trust the safety of the food they buy, prepare and consume every day.

Food standards play a critical role in everyday life, helping ensure the food we eat is safe. Supporting the development of those standards is a robust process informed by science, evidence and expert risk assessment.

Every day, food scientists, nutrition experts, toxicologists, microbiologists, risk analysts and other specialists are working behind the scenes to assess evidence and provide scientific advice on a wide range of food-related issues.
