Something new for you: Hopped Modern Soda!

Remember that truckload of fresh hops we got from a neighbor last year, and the still we borrowed from another friend? Well, add in Lots Of Time et voila. I’ve been wanting a non-alcoholic hopped drink for a very long time but kept getting stuck at a common obstacle… it has to actually be good. Not kinda good, really good. Great, in fact. Hops are not readily amenable to this outcome in this format, so it’s been a many-years-long project, pre-dating all our other sodas in fact. Turns out distilling, although very long in process, did the trick… all the beautiful aromatics and floral flavors without *any* bitterness or vegetal undertones. I’m unsure there’s any payback for the amount of work this was to make, but it’s deliciousness is very worth it.

We chose Amarillo and Mt Hood hops because, well, that’s what we were given. Now we have the process down, there’s a list a mile long of other hops and combinations we’d like to try. For now, these two varietals evoke a very grapefruit/lemon citrus tone and some peppery spice behind them, though the finish is remarkably floral and light. I seriously wouldn’t have expected them to produce such delicate and outstanding results, but they did.

As with all Modern Sodas, low sugar, low acid and no weirdo chemicals or cane sugar.

Modern Soda is now available with your home delivery. Can’t get more local than that… says so right on the bottle.

We tried crafting a Modern Soda / Cowichan Milk commemorative mocktail to celebrate the occasion but… well, it didn’t work. At all. So… don’t even. Maybe one of you more clever bar folk out there can crack that nut.

We did, however, find time to add one more paragraph *and* a product page to modernsoda.com so that’s one baby step closer to done 🙂

Done correctly, dry January can actually be quite enjoyable.

And if you snorted ‘yeah right’ at that, just think of our non-alcoholic ciders as premium craft cocktail mixers until you can have your friends over again in February.

All natural & real ingredients, low sugar, low acid and no weirdo chemicals or cane sugar.

Because making something good should be more important than making it cheaply.

Hey our low-sugar non-alcoholic ciders are reloaded including a sneak peek of something very special and seasonal. There’s a subtle hint in the photo, a hint so cunning you could pin a tail on it and call it a weasel.

New non-alcoholic Modern Soda: mRNA! Time to vaccinate yourself against a long, hot, smokey, parched summer. Mango, rhubarb, naranja (mandarin orange - - had to use the Spanish word to make the name work) and apple: mRNA. Plus lemon - again, had to make the name work. I was determined at this point. I don’t think this really needs a description, does it? Imagine everything juicy and fruity you love, balanced with just enough natural sweetness to produce the smile you do really deserve.

Available now at the cidery, and also from the swim-up bar in Nirvana.

Its worth acknowledging that we’ve been collecting these so-called unwanted “ugly” fruits for a long time, courtesy of the food security initiatives at which finds better uses for food than throwing it out. Clever, oui?

1oz Sheringham Distillery Dark Chocolate Vodka
4oz Modern Soda XOXO
1tbsp fresh lemon juice
5 fresh-picked raspberries, muddled
Twist lemon zest

Mix. Sip. Smile.

…and now there’s still shortcake for later. Bonus.

Now this has been a popular request: Modern Soda Mingler packs! One each of our nine varieties and three more randomly included doubles. They’re sealed with gloriously colorful packing tape so sorry no substitutions or requests for the doubles. $40 + tax/deposit and yes.... they’re on the website too 🥳 Individual sodas will be online too shortly. Just everything’s growing so bloody fast here... there isn’t a mower turbocharged enough for this madness! Sorry, I digress.

And then there were nine... sodas. Faeriessence and Root took the longest to produce because there were very clear attributes to be achieved. Root is our version of birch bark beer, a close cousin of root beer but more earthy up front and not as aggressive in tone. Its a perfect companion to the fragrant sweetness of the soda, and like the other sodas does a wonderful job of tasting much sweeter than it really is.

Faeriessence is truly a coup. Perhaps that’s a little dramatic but this is inarguably an incredibly unique soda. I’m not going to be naive that it won’t be a bit divisive, but it’s also my favorite. It’s not going to be a kid favorite. Compared its cider counterpart, we’ve increased the hyssop and lemon balm quite a bit and upped the wormwood a *lot*. If you’re unfamiliar with wormwood, it’s bitter. Really bitter. Throw in a faceful of savory herbs at the start, layer it with three powerful sources of licorice character, balance with sarsaparilla and then let wormwood bring it on home. Yes, I know... a bit dramatic for a soda. But it’s really that good. It’s punchy, forceful in delivering flavor and not something you’re going to forget for a while. Try it with a splash of mezcal and you’ll never forget it. And really, isn’t that the point?
