Serves 6 Burgers | Takes Overnight + 25 mins
Ingredients:
100g Flahavan’s Organic Porridge Oats
6 tbsp Good4U Vitamin Breakfast Boost
3 tbsp Good4U Garlic & Chilli Salad Topper
1 tbsp easy mix yeast
55g caster sugar
125ml warm water
600g bread flour, plus extra for dusting
1½ tsp salt
250ml oat milk, lukewarm
50ml rapeseed oil, plus extra for coating
6 Portobello mushrooms
2 tbsp sriracha sauce
1 tbsp Marigold bouillon powder
1 tsp garlic salt
100g gram flour
Olive oil spray
Method:
1. Mix the flour, oats, yeast, sugar and salt. Make a well in the centre, add the milk and oil and mix to form a thick batter. Cover and leave to rise somewhere warm overnight.
2. Punch down the dough, dust with flour and divide into 6 balls. Place on a baking sheet, brush with oil and leave somewhere warm for a second rise. Preheat the oven to 200°C.
3. Sprinkle the buns with extra oats and a pinch of salt, then bake for 15–18 minutes until golden.
4. Toss the mushrooms in sriracha and leave to marinate for 30 minutes, then add the bouillon. Mix 3 tbsp Breakfast Boost with 5 tbsp warm water and leave for 10 minutes.
5. Place the gram flour in a shallow dish. Lightly whisk the Breakfast Boost mixture until frothy. Crush the Garlic & Chilli Salad Topper and combine with the remaining Breakfast Boost and garlic salt.
6. Dip each mushroom into the gram flour batter, followed by the Breakfast Boost mixture and garlic crumb. Spray with olive oil and bake for 15–18 minutes until golden and crispy.
7. Assemble with sriracha mayo, shredded lettuce, red pepper, pickles, vegan mayo and the crispy mushrooms.
Serve with chips and enjoy! 😋
