TABBOULEH! This recipe promises a burst of brightness, and the students at the HSRC “test kitchen” fine-tuned this Lebanese dish just for you! Pro tip: chop the parsley very finely so that it can blend well with everything else in the salad, otherwise, a mouthful of just parsley might be too herby for some. Serve wrapped in a lettuce leaf and wait as the flavors of olive oil, lemon, tomato, and herb-filled goodness meet in your mouth.

So many of you know the great work of Miguel Arellano, the HSRC Basic Needs Navigator... well now we're one step closer to a Basic Needs Navigator on all the public college campuses in Oregon! This is a big win for college access in our state!

We did it–HB 2835 passed–making us one step closer to Hunger-Free Campuses in Oregon! There will now be a benefits navigator at all Oregon community colleges and public universities ensuring students get their essential needs met. Thank you to the students who led this work for their fierce advocacy.

Happy Friday! I am sad to say this is my last post in the takeover. Thank you all so much for engaging with my posts this week. I had a great time sharing a bit about my life and raising awareness for food insecurity.

One of the last pieces of advice I would like to give before we part ways, is to pay attention! You may not even know if your friends are food insecure because it is not something that people are comfortable talking about. Admitting that you cannot afford food is not easy. It is hard to deal with food insecurity on your own, and support is extremely important. Please pay attention to your friends. If you’re inviting friends to go out to dinner, but notice they always say no or only order an appetizer, they may not feel comfortable spending money. Maybe try to plan other fun activities to hang out with your friends like going on a hike, having a homemade picnic, or just having a movie night!

I am grateful to have such a wonderful support network in my friends here, and I hope you all can find your support system too! Featured here, is my lovely soccer team and I after our last game. We are graduating at the end of this term, and have been playing IM soccer as a team since freshman year. I am going to miss being a part of such a great team, but the friendships will last a lifetime.

Time to dive into the deeper topics! Let’s address some questions before we get into the nitty-gritty statistics.

1. What is food insecurity?
Food insecurity is the lack of consistent access to enough food for every person in a household to live a healthy life. According to a December 2020 report from Professor Mark Edwards at Oregon State University, rates of food insecurity and hunger in Oregon more than doubled in 2020, with abouy 1 million Oregonians experiencing food insecurity.

2. What other factors contribute to food insecurity?
Food insecurity disproportionately affects American Indian, Hispanic, and Black people, as shown in the third picture. Single mothers also experience hunger and food insecurity at a disproportionately high rate.

3. Why is food insecurity tricky to discuss?
Food insecurity can be a difficult thing to talk about. There is often shame associated with the topic. Rebecca De Souza, author of “Feeding the Other,” describes the “framing, blaming, and shaming” around being hungry as “neoliberal stigma” which reframes hunger’s structural problems as an issue for each individual hungry person. The experiences of people living with hunger or food insecurity are not always understood and public institutions have not done their part to protect people from hunger. Places such as the HSRC are here to make sure that people who are food insecure get the help they need. Programs such as SNAP, Healthy Beaver Bags, and so much more are implemented to move away from the shame around food insecurity and towards acceptance.

Here is a glimpse of what I ate today: avocado toast with a veggie patty for breakfast, Chipotle for lunch because I ran out of time in between work, and grilled chicken, lemon, and arugula pasta for dinner! Full disclosure, I have not had any issues with food insecurity. Though there are some dietary restrictions when I’m home, there are none otherwise. When I’m at school, I have the luxury to eat whatever I want whenever they want to. Not everyone can do that.

I do not have any dietary restrictions so finding foods to eat isn’t very difficult for me. However, I come from a Hindu family and there are some religious expectations when I am home. For example, my parents don’t cook meat on certain days of the week, and twice a year, we eat no meat and unspiced foods for ten days. I don’t follow these expectations when I am not home so it has not been much of an issue for me at school but it is a big part of my culture.

Hello again! As I mentioned earlier, I became involved with the HSRC through the Poetry of Hunger colloquia. I took the class in Fall of 2019, which was taught by Dr. Hiram Larew and Dr. Stella Coakley. It was only a 5-week course with 7 students, but it had a significant impact on me. The class used poems as a means to help us understand what it is like to feel hunger from the perspective of the writer. I am fortunate to be food secure, but the class did a wonderful job presenting the hardships surrounding food insecurity by means of poetry.

I felt passionate to raise awareness for the resources that OSU has to offer food insecure students, so I decided to do an outreach project. The original “Chalk Walk” I had planned could not be implemented because of the pandemic, but I still felt like this project needed to happen. So I worked with Nicole Hindes, the director of the HSRC, to raise awareness via social media. This is why I am here!

Poetry is a powerful form of art that “can grab hearts in a way data, trendlines, and statistics simply can’t,” as Dr. Larew puts it. Please listen to Dr. Larew share a moving haiku by Matsuo Basho. I have a question. If I have an overabundance of a particular vegetable in my garden, I understand that you will take donations. Since fresh vegetables have a pretty short shelf life, I am wondering how much of the donations are really put to good use before they go bad? It is Summer and the student population is down, so, is the demand very great? Or do you have a glut right now?
