"As the COVID-19 pandemic set in, the team at Oregon State’s Human Services Resource Center saw a huge spike in demand for food assistance from OSU students and the community. At the same time, many students were finding themselves at home, doing a lot more cooking than they were used to, and looking for ideas and support.

Healthy Beaver Bags are available today (Friday July 3rd) on the patio behind Champinefu Lodge 12-2:30pm (OSU ID required).

Today's bag has ingredients to make a loaf of banana bread (with chocolate chips if you want to), salad mix, fresh broccoli, eggs, and yogurt. Learn about why white whole wheat flour is a great ingredient.

Today’s HBB feels like a celebration- a bunch of our favorites for making it thru! Nourish yourself and the ones you love- it’s been a rough one. Fresh greens and garlic scapes from a local farm, OSU Beaver Cheese (made from cow’s milk), farm fresh strawberries, yogurt, eggs and pepitas to top your salad with. 12-2:30 today from the Champinefu Lodge back porch for OSU ID holders (students, staff, recently laid off staff, students taking a break from classes or recently graduated). Please wear a mask if you have one, please stay home if you’re sick, please keep physical distance from others.

We started Healthy Beaver Bags this term as an experiment to help food insecure students get more fresh and healthy food during the pandemic shutdown. We will keep doing this through the summer- and we are trying to figure out how to keep it going after that too. All students deserve access to healthy, tasty and nourishing food. I wish college was free and the HSRC could go outta business- but in the meantime we are glad to be here and glad for the donors who support our work. Healthy Beaver Bags have been the best parts of our weeks. We hope you’ve been having fun trying new recipes, new foods and learning a bit along the way.

This is probably the hardest finals week in the history of finals weeks.

On top of studying, taking care of others and changing the world- We hope you are all taking time for nourishment: from supportive relationships, spiritual connections (if that’s your thing), making art, loving on your people, dance/movement, and of course enjoying a satisfying meal. Eating veggies and fruits with antioxidants when you’re stressed is good for you at the cellular level. We are so grateful to have a nice mix of fresh produce going out with today’s food boxes. Folks will get a mix from what’s pictured here along with shelf stable basics. 10-3 pm today, Champinefu Lodge back porch, income limits apply (see prior posts), please wear a mask if you have one, please stay home if you’re sick.

Today’s Heath Beaver Bag is themed around things to do with Garbanzo Beans! In our survey y’all shared that you’re struggling with new ideas and what to do with them. Of course, our brains went to hummus- so the themed recipe is the stuff you need to make hummus, including some tahini and lemons, and maybe a bit of garlic 🧄 if you like it that way :) other recipes in the bag are some of our favorites like roasted chickpeas (a good crunchy snack) and Pasta con Ceci. Bags include cherry tomatoes, greens from Goodfoot Farm (local!), eggs, green garlic, and some mozzarella. Recipes include panzanella, a few ways to make green garlic the star of a pasta recipe, and some salad ideas. We’ve also got some yogurt info from Food Hero! At @hsrcosu we have been wearing masks for over a month. For us, this really feels like an act of love for each of you and for each other/our teammates. Wearing a mask, even on days when we are moving a lot and lifting heavy boxes... this is a gesture we can make- to show you the care we have for your health. We also want to be here for you for the long haul- wearing a mask is something we see as important to try to stay a healthy team so we can keep going and serving you. We’ve been grateful for the friends, family and community members who made us masks- and our rock star supporters who dropped off dozens of fabric masks that we gave out at today’s pantry box distribution. Today’s HBB theme is nuts! Our friends at See's Candies helped us with a donation for some of those and we rounded out with some more- so you’ll get one of those mixed nuts options. Whether you’re a #meatlessmondays fan or trying to explore other proteins due to the current meat shortage- nuts are a great place for healthy fats. We’re also sending out bags with strawberries and greens from a local farm- Goodfoot Farm ! 🥬 + 🍓 + 🥜 = a pretty yummy salad if you ask us! Did you know that you don’t have to be a currently enrolled student to get a Healthy Beaver Bag?! It’s true! We are here for you if you take a break, if you’re a recent grad, and if you’re an OSU staff member (or you were staff) who needs a bit more healthy fresh items in a budget friendly way... that’s what we are here for! And of course we will be here for the summer for you! We just need your OSU ID number- no current enrollment status required. This is how we take care of our whole Oregon State University Beaver community, especially in hard times. We are all in this together.

Today’s Healthy Beaver Bag is themed around sweet potatoes! We have the ingredients you need to make some yummy sweet potato home fries, and a few other related treats. Today’s bags (while supplies last) come with sweet potatoes, a red pepper, sour cream packets, apples, granola bars, taco seasoning, eggs, yogurt etc. We will accommodate dietary restrictions. We’ve also got some great extra tips and info on sweet potatoes from our friends Food Hero and at the Global Community Kitchen!

Today’s Healthy Beaver Bag theme is: Oatmeal! We’ve got some great recipes from OSU Global Community Kitchen and of course some awesome @beafoodhero info about this stellar staple, a great grain! Bags will come with some fresh green apples, bags of cinnamon, yogurt, bananas, peanut butter, sugars, half and half and some veggies that aren’t necessarily related but are still very yummy! Featured recipes are simple oats on yogurt, a peanut butter oatmeal protein packed option and overnight oats. And more! It’s a rainy day for food boxes, but we’ve got our tent up! Shelf-stable basics available today (and every Wednesday) from 10-3 at Champinefu Lodge back porch. Available to all income eligible folks (see previous post), no ID required. Please wear a mask or face covering if you have one. Please stay home if you’re sick. Boxes include canned food/pantry staples. Some frozen proteins, dairy, eggs while stock holds up. We have toilet paper and some produce too (bananas, oranges). Pescatarian, gluten free, vegetarian/vegan available on request. Also, many thanks to Community Engagement & Leadership - Oregon State University for lending us the tents!

Boost your Ramen!

Today’s Healthy Beaver Bags (HBB) are all about boosting your ramen! We’ve got some really yummy add-ins to transform your college student staple- and with a poached egg, really taking it next level! It’s easier than you think and the bags come with a how-to-guide. Bags are also coming with some fresh kale- a veggie with a bit of a reputation we think is unfair. We think it’s super yummy and quite versatile.

I have a question. If I have an overabundance of a particular vegetable in my garden, I understand that you will take donations. Since fresh vegetables have a pretty short shelf life, I am wondering how much of the donations are really put to good use before they go bad? It is Summer and the student population is down, so, is the demand very great? Or do you have a glut right now?

I am currently an OSU senior student parent. I wanted to share this here for the sake of my youngest son, whom I have half the week, while he lives with his father the other half of the week. They have gone through a devastating loss and my heart aches for my son. My sister, my friends, my family, and myself are doing what we can to help, but we are limited to how much we can help.
