Did you know that you don’t have to be a currently enrolled student to get a Healthy Beaver Bag?! It’s true! We are here for you if you take a break, if you’re a recent grad, and if you’re an OSU staff member (or you were staff) who needs a bit more healthy fresh items in a budget friendly way... that’s what we are here for! And of course we will be here for the summer for you! We just need your OSU ID number- no current enrollment status required. This is how we take care of our whole Oregon State University Beaver community, especially in hard times. We are all in this together.

Today’s Healthy Beaver Bag is themed around sweet potatoes! We have the ingredients you need to make some yummy sweet potato home fries, and a few other related treats. Today’s bags (while supplies last) come with sweet potatoes, a red pepper, sour cream packets, apples, granola bars, taco seasoning, eggs, yogurt etc. We will accommodate dietary restrictions. We’ve also got some great extra tips and info on sweet potatoes from our friends Food Hero and at the Global Community Kitchen!

Healthy Beaver Bag hours are every Friday from 12-2:30 at the back porch if Champinefu Lodge. Must have OSU ID. Please keep physical distancing. Please wear a mask if you have one. Today’s Healthy Beaver Bag theme is: Oatmeal! We’ve got some great recipes from OSU Global Community Kitchen and of course some awesome @beafoodhero info about this stellar staple, a great grain! Bags will come with some fresh green apples, bags of cinnamon, yogurt, bananas, peanut butter, sugars, half and half and some veggies that aren’t necessarily related but are still very yummy! Featured recipes are simple oats on yogurt, a peanut butter oatmeal protein packed option and overnight oats. And more! Tag us in your fave ways to eat oatmeal/ let us know how you’re cooking these ingredients. 🥄🍌🍏 We will accommodate dietary restrictions (tell us when you get here), happily. Today’s Healthy Beaver Bag theme is toast! Getting fancy with toast, making it a full meal, past breakfast! This week is jam packed with recipe ideas and info- avocado toast, egg salad, even a guest recipe from Scott in Office of Institutional Diversity at Oregon State University! It’s a rainy day for food boxes, but we’ve got our tent up! Shelf-stable basics available today (and every Wednesday) from 10-3 at Champinefu Lodge back porch. Available to all income eligible folks (see previous post), no ID required. Please wear a mask or face covering if you have one. Please stay home if you’re sick. Boxes include canned food/pantry staples. Some frozen proteins, dairy, eggs while stock holds up. We have toilet paper and some produce too (bananas, oranges). Pescatarian, gluten free, vegetarian/vegan available on request. Also, many thanks to Community Engagement & Leadership - Oregon State University for lending us the tents!

Boost your Ramen!

Today’s Healthy Beaver Bags (HBB) are all about boosting your ramen! We’ve got some really yummy add-ins to transform your college student staple- and with a poached egg, really taking it next level! It’s easier than you think and the bags come with a how-to-guide. Bags are also coming with some fresh kale- a veggie with a bit of a reputation we think is unfair. We think it’s super yummy and quite versatile.

Do you hack your ramen at home? What’s your fave way to spice it up? Are you cooking other things with HBBs? If you’re away from corvallis, but you’ve got a fave way to make kale, let us know. Use the hashtag #HealthyBeaverEats, or tag us and let us know what you’re cooking up!

‪Food boxes (every weds) at back porch of Champinefu Lodge from 10-3, open to any who meet income guidelines (see previous post). Boxes are a mix of pantry staples. Some fresh bananas, apples, onions, a bit of frozen protein. Please stay home if you’re sick. We can make boxes vegetarian, vegan, pescatarian, gluten free.‬ Please maintain physical distancing with staff and others. On Fridays, we are doing a special food distribution for OSU community members only (must have OSU ID) for our new program, Healthy Beaver Bags. Emily Faltesek, RD, our food security programs coordinator is dedicated to seeing that our low-income students (and staff) keep some healthy nutritional options in their diets. Each box will have a theme- this week, it’s potatoes. We’ll include some recipes, information from Food Hero and a few other rotating ingredients as we go depending on seasonality, etc. Again, this is only for OSU community members. Pick up at the back porch of Champinefu Lodge from 12-2:30 pm (or until we run out) on Fridays. Please maintain social distancing. Please stay home if you’re sick.

We are doing food boxes today (and next Wednesday) from 10-3 at Champinefu lodge. An example box is below. We will sub out to make boxes vegetarian or halal. 2 rolls of toilet paper 🧻 per household if needed. Income guidelines changed, see photo. A household of one needs to make less than $3190 per month, household of four, less than $6550. No need to bring verification, we’ll take you at your word. Not restricted to students or OSU community members. Please keep social distance and come to the back porch. Exact items will be different for each box. We want you to take it all/don’t leave anything behind. Go beaves!

Important updates: our crew pushed out nearly 10,000 lbs of food last week- much of it donated by our campus community (we LOVE YOU ALL!)- we will NOT be doing any food boxes on Monday. We need to get our bearings on what the near-term road ahead is gonna look like with regard to food supply and food stock. This is gonna be a marathon, not a sprint and we need to do a bit of strategic thinking about what it means to serve our community best with the resources we have. We are gonna be posting more and more in our stories- tips on living with a tight budget and many many times we want feedback from you! Our budget resources are gonna shift and we are gonna come to you for feedback to make sure you’re on board with this!! We’re gonna get through this together, stick with us! Also share our posts and stories, some people you know may be new to living with financial stress.

Food box hours are dropping from 10-3 today and tomorrow - we ran ourselves ragged yesterday, so we need to pace ourselves a bit! I have a question. If I have an overabundance of a particular vegetable in my garden, I understand that you will take donations. Since fresh vegetables have a pretty short shelf life, I am wondering how much of the donations are really put to good use before they go bad? It is Summer and the student population is down, so, is the demand very great? Or do you have a glut right now?

I am currently an OSU senior student parent. I wanted to share this here for the sake of my youngest son, whom I have half the week, while he lives with his father the other half of the week. They have gone through a devastating loss and my heart aches for my son. My sister, my friends, my family, and myself are doing what we can to help, but we are limited to how much we can help.
