Served up some Creekstone farm briskets this past weekend. The picture was part of some nice briskets received. They were crazy expensive, but I wasn’t 100% satisfied. Some of the briskets were smaller than what I had hoped for. I bought a box of 5 and couldn’t inspect them before purchase. I got some untrimmed briskets that were about 9-10 lbs. NEVER get them that small. Smallest weight should be at least 12 with 15 preferred. If they’re too small, they won’t be able to stand the heat for such a long period of time and might dry out. I’m all about quality of food and service so if you didn’t like yours then please let me know and I’ll try to hook it up somehow the next time you place an order.
The quality of bbq food can be consistent with good fire management, but you always have those variables that can sometimes throw things off like the wood you receive, suppliers giving you crappy sized meats, badly butchered meats, having your warming oven break down, or even stabbing your own hand while trimming and having to cancel all your orders to go to the ER room to get stitches. All has happened to me 🤣🙈😂😆.
Anyhow, I think this is what attracts me to the bbq game. The unexpected. I tell myself after every offering that it might be my last because it’s a whole lot of sleep deprivation, energy exerted, and sometimes I’m unhappy with the results. However, most of the time I’m feeling like this I get those couple of texts or messages that say the food is awesome. This is what keeps me coming back to serve you guys. Thank you everyone!
