This title probably sums up how I’ve been feeling lately. But I did want to interrupt your feed to talk all things Bananas.⁠⠀⠀

Bananas are a nutritious fruit that can be eaten in so many different ways. While most people eat bananas when they’re ripe (yellow), you can also safely eat them in their other stages. Green and brown bananas still provide a lot of the good nutrients that are in ripe bananas like potassium, magnesium, vitamin C and vitamin B6. ⁠⠀⠀

Green bananas - contain mostly starch and tend to be more bitter in taste and firm in texture than yellow bananas. Green bananas also contain lots of fiber, prebiotics, pectin, and resistant starches which have been linked to health benefits like helping to keep your gut bacteria healthy. Because they have the most fiber, these bananas are slightly more filling than a yellow or brown banana. ⁠⠀⠀

Yellow bananas - are a great source of antioxidants, vitamins, minerals, fiber, and other nutrients. They have lost a little bit of resistant starch since being unripe, and therefore they taste sweeter than green bananas. Bananas in this stage are quickly digested and leave you feeling full for longer. ⁠⠀⠀

Brown bananas - contain the most antioxidants out of all the stages and the least amount of resistant starches, meaning that they’re very sweet. This flavor makes them great for baking! In this stage the banana has lost the most micronutrients, but it is still a healthy choice. ⁠⠀⠀

Pro tip: If you want to ripen a banana faster you can place it in a brown paper bag, and if you want to slow down the process put it in the fridge. 😁⁠⠀⠀

Purple carrots: You may have seen these at your local fruit and vegie market and thought they looked a little strange. As it happens these were normal #carrots up until the 17th century, so they’re actually more normal than their orange counterparts! Very high in anti-inflammatory properties, support a healthy weight, and excellent sources of fibre and Vitamin A.

Purple cabbage: A striking flavour both raw and cooked, #purplecabbage boosts the immune system, is rich in fibre and Vitamin K (important for healthy bones). It also contains probiotics.
Purple potatoes: Apart from having a mesmerising textured purple colour, they help lower blood pressure, keep blood circulation healthy and can be used as a natural alternative to artificial dye.

Eggplant: Rich source of Vitamin K, vitamin C, vitamin B6, magnesium, potassium and too many more. #Eggplant is often touted as one of the world’s healthiest foods, a pitch made stronger with the presence of #anthocyanin. Just make sure you don’t throw out the skin – it’s the most nutritious part.

Some of her work in film includes Nona, produced by Kate Bosworth and Cine Loteria currently on Amazon Prime. She has worked in over 20 commercials in both English and Spanish. Her debut as a film director for her short narrative What's Your L.A. won Best Audience Award for NFMLA. She has now partnered with actress and storyteller Christina Igaraividez in producing, writing and directing their very own digital Channel @Latinaish.tv, dedicated primarily but not limited to women and diverse talent. She loves dogs and sushi, and of course, tacos.
