Eye-Opening Recipe of the Month....Carrot & Butternut Squash Soup

Nothing says fall more than a warm bowl of vegetable soup. Quick, easy, hearty and delicious. Vegan, gluten and dairy-free, this soup checks all the boxes. With a high beta-carotene content, carrots are eye health superfoods while butternut squash is packed with Vitamin C, a nutrient that helps strengthen blood vessels in the eyes helping to prevents cataracts and macular degeneration.

Ingredients:
*1 T olive oil
*2 onions diced
*2 cloves garlic, grated or crushed
*1/2 t. dried chili flakes
* 1 t. cumin
*1 t. garam marsala
*1 lb. carrots unpeeled & chopped into small chunks
*1 lb. butternut squash skin removed & chopped into small chunks
*25 oz. vegetable stock
*salt & pepper to taste

Sauté the onions, garlic, chili flakes and spices. Add chopped carrots, squash, vegetable stock, salt & pepper. Bring to a boil then simmer for 20 minutes. Blitz in a blender until smooth.

Perfect with crusty bread! 🍁
