In Memory of Martin Carlin

Some people leave a mark on the industry.
Others become part of it.

Martin Carlin was one of those rare figures whose impact can’t be measured in awards or titles alone — but in the chefs he shaped, the standards he upheld, and the quiet voice that stays with you long after the kitchen lights go down.

A lifelong member of the ACF, Martin dedicated himself to the craft and to the people within it. In Western Australia, his influence runs deep — through generations of chefs who carry his lessons forward every single day.

Because if you’ve ever stopped yourself from cutting a corner…
If you’ve ever pushed a little harder for consistency, for pride, for doing it properly…
Chances are, that was Martin.

He lives on in the discipline.
In the standards.
In the voice in the back of your head that says, “Do it right.”

The industry is better because of him.
And many of us are better chefs because of him.

Rest easy, Chef.
Your legacy continues in every kitchen that refuses to compromise.

APPRENTICE COMPLETION
On Friday 20th of February 2026 Ehlana completed her apprenticeship!!
Ehlana started with HGT in 2023 at The Hyde Park Hotel under Chef Kenneth Curgenven, where she gained a lot of experience in different areas of the kitchen for the first and second year of her apprenticeship. In 2025 Ehlana was ready to challenge herself some more and moved to The Intercontinental under Chef Andrew McGie to complete her third year where she worked the busy Breakfast Buffet and in their fine dining restaurant Ascua where she ran cold and hot larder section. This led to her employment at The Intercontinental upon completion of her qualification.
Ehlana has been a very hard worker her whole apprenticeship, gaining high praise from her supervisors and Chefs for her level headedness and ability to work well under pressure.
Well done Ehlana, a qualification well deserved, congratulations!

Both have officially earned their place in the Proud to Be a Chef Program — one of Australia’s most inspiring mentorship opportunities for emerging culinary talent. 👨‍🍳👩‍🍳🔥

Tyler and Stephanie impressed the judges with their signature dishes and their heartfelt reflections on why they are proud to be chefs. Their passion, skill, and dedication truly shine through every plate.
