Victoria doesn’t do whisk(e)y by the book, and nowhere is that more apparent than in the barrels we use.

Victorian distillers are doing some of the most creative barrel work in the world. Ancient fortified wine casks, locally grown timber, experimental layering, cross-ageing with beer - the results are unlike anything else.

The time has come.... please put your hands together for our Serves of the State winner:

Callipo Sour from Backspace. This delicious little number uses Amore Limoncello from Island Spirits along with Yuzu Liqueur, lemon and sugar!

Over the past three weeks, we’ve been asking you to head into our amazing venue partners and try their creations, so they you can vote for your favourite Victorian cocktail - and we have heard you loud and clear.

Today is one of our favourite days of the year: World Gin Day.

Victoria has always been a leader in the gin scene, from having the first gin-exclusive producer with Four Pillars to distilleries utilising state-of-the-art techniques.

So today, we celebrate the 140+ gin distillers. Now go and enjoy that G&T, Martini or Negroni!
