Gilles Despreaux is your culinary guide of La Chapelle for our 2022 season. Hailing from Paris his path has crossed several notorious star restaurants working alongside some of the most inspiring chefs and culinary minds that created his current signature style. Going to our restaurant is a true discovery, including a medieval wine cellar that houses the most exquisite and biodynamic natural wines. Our menu is mainly composed according to a farm-to-fork principle: local, fresh, and, where possible in collaboration with local farmers in order to strengthen the economic and social ties with the region and its people. Our chef cooks a weekly six to eight-course menu. Creating new dishes that are always in tune with the rhythm of nature and what the farmer in his field has to offer. This, combined with culinary discoveries and recent worldwide inspirations.

Savourez notre menu de Noël et du Nouvel An, créé sur mesure par le Chef Jürgen Van Riet — une symphonie hivernale mêlant éclat nordique, légumes d’hiver, fruits de mer délicats, braisés raffinés et gibier festif, réunis dans une harmonie de saveurs de saison.
