Welcome back to what's in the bag week 3

🥕 Curry carrot soup

This soup is perfect on cooler days and it is quick and easy to make.

Ingredients you will need:
2 tablespoons vegetable oil
1 onion, chopped
1 tablespoon curry powder
2 pounds carrots, chopped
4 cups vegetable broth
2 cups water, or as needed

Optional: Yogurt or sour cream dollop

Directions:
Heat oil in a large pot over medium heat. Saute onion until tender and translucent. Stir in the curry powder. Add the chopped carrots, and stir until the carrots are coated. Pour in the vegetable broth, and simmer until the carrots are soft, about 20 minutes.

Transfer the carrots and broth to a blender and puree until smooth. Pour back into the pot, and thin with water to your preferred consistency.

Meridian Farm Market donated a gift certificate to South Delta Food Bank ahead of Saturday's food drive.

Volunteer Catherine took it straight to their shelves and filled a cart for our neighbors who need it most.

This is what community looks like. One local shop, one volunteer and a full cart of groceries headed our way.

Join us tomorrow, September 12, at the Thrifty Foods Second Annual Food Drive and Charity BBQ in Tsawwassen. Drop off non-perishable food, school supplies or a monetary donation, then stick around for a burger.
