HOW RED WINE MAKING IS PROCESSED?
The biochemical process of transforming grapes into wine, winemaking differs depending on whether you want to make white or red wine.
Specifically, red winemaking (or maceration winemaking) involves bringing the pomace into contact with the fermenting must: the solid parts of the grape, including its skin and seeds, are brought into contact with the liquid fraction during fermentation so that part of their substances can be extracted.
What distinguishes it from white winemaking is the simultaneous fermentation and maceration.
Alcoholic Fermentation of Grapes
It all begins with the harvest, and therefore with picking the grapes when they are ripe: their sugar content is at its highest, their acidity is at its lowest, and any herbaceous aromas have disappeared. To obtain a good red wine, it is essential to harvest the grapes at the right phenolic and technological ripeness, verifying these parameters through a sensory analysis of the skin, pulp, and seeds.
Equally crucial is removing damaged grapes before proceeding with the subsequent steps: destemming to separate the grapes from the stalks (which would give the wine a bitter taste and contain a lot of water) and pressing. This last preparatory step releases the liquid from the grapes, facilitating fermentation and maceration.
The fermentation of red wine, typically carried out in steel tanks, serves to transform the glucose and fructose contained in the must into ethanol, carbon dioxide, heat, and other byproducts through the action of yeasts. Some wineries choose not to add yeasts, instead letting the indigenous yeasts naturally present on the grapes and in the cellar "guide" the fermentation; others add Active Dry Yeast preparations that limit the risk of organoleptic and flavor deviations.
AT WHAT TEMPERATURE SHOULD RED WINE FERMENT?
The ideal temperature for fermenting red wine is 27-30°C: modern equipment helps maintain a constant temperature, thus promoting the production of quality wine.
During fermentation, the effect is that of a boiling mass due to the high production of CO2: the solid part of the must, including the grape seeds and skins, is pushed to the surface by the carbon dioxide and floats there, forming the so-called "floating cap." During fermentation, the cap is repeatedly punched down and then pumped over to dissolve the polyphenols, prevent the pomace from acetifying, and promote yeast colonization. This process can be performed by hand in the ancient manner or delegated to the machinery many wineries have (fermenters or fermenters).
GRAPE MACERATION
Red winemaking is also known as maceration winemaking.
Maceration involves keeping the pomace in contact with the must to facilitate the extraction of the substances contained in the grape skin and pulp.
The duration of maceration depends on the wine you intend to produce: 4-7 days for fresh, fruity wines to be drunk young, 15-20 days for wines rich in tannins intended for long aging. Anthocyanins, in fact, reach their maximum release after 2-5 days. Tannin release, on the other hand, is progressive, slowing after 10-20 days.
Various maceration techniques can be used. Cold pre-fermentation maceration, aimed at producing colorful, fruity wines, involves adding dry ice to the tank containing the crushed grapes for 5-10 days, until the temperature drops to 5°C.
The final hot maceration, on the other hand, is performed at the end of fermentation, providing a burst of heat to the pomace in contact with the wine, resulting in fuller-bodied wines.
DRAWING OF THE GRAPES
At the end of red wine fermentation, the skins and pips are separated from the must. This operation is called racking and is performed at a specific time depending on the desired product.
Rosé wines require early racking, young red wines require medium racking, and aged red wines require late racking.
To perform racking, the wine is aerated by adding sulfur dioxide: this step is performed following the end of fermentation, when residual sugars reach 1-2%. Furthermore, aerating the wine removes any reductive odors.
Racking and Bottling Red Wine
Bottling red wine is the final stage of its production, preceded by stabilization.
Typically, a red wine is stabilized by racking after an analytical and organoleptic check: the liquid is moved from one container to another to separate the clear liquid from the lees (residues of yeast, bacteria, pesticides, and small pieces of skin). The number of rackings varies depending on the winery's procedures. A further step is the air test, which is performed by leaving a small quantity of wine at 20°C for 48 hours to check for any alterations in color or aroma.
Bottling red wine consists of filling the bottles with wine, inserting the cork and capsule, and labeling them. The wine is then ready for storage.
DIFFERENCE BETWEEN WHITE AND RED WINE MAKING
The difference between white and red wine making lies in maceration: it is always used in red wine making, while it is not used in white wine making (with the exception of macerated white wines or the popular "orange wines," which undergo extensive maceration, thus achieving golden and orange hues).
Since maceration serves to obtain a higher level of tannins and an intense pigment, typical of red wine, white wine production does not involve contact between the pomace and the must.
