Meet Katie Charles: A Zambian Pastry Chef Making Her Mark in France

Today, we shine a spotlight on Katie Charles, a Zambian pastry chef based in France who is using her expertise to inspire and empower bakers back home.

With more than 11 years of experience, Ms. Charles recently returned to Zambia for the third time to conduct a series of Professional Ganache Masterclasses, equipping bakers and pastry entrepreneurs with advanced cake-finishing techniques suited to warmer climates.

Her passion for pastry began in her family kitchen in Zambia, where, from the age of nine, she learned to cook and bake alongside her mother. Those early lessons laid the foundation for a career that has taken her to the heart of French pâtisserie.

Ms. Charles holds the French CAP Pâtissier (Certificat d’Aptitude Professionnelle), France’s nationally recognised professional pastry qualification. She further honed her skills during internships with two of the world’s most celebrated pastry chefs, Pierre Hermé and Christophe Adam at L’Éclair de Génie in Paris, refining her expertise in authentic French pastry, chocolate work, viennoiserie, and professional bakery production.

She first introduced professional French pastry training in Zambia in 2016 and returned in 2017 to continue mentoring local bakers. Since then, she has remained committed to sharing authentic French pastry techniques while adapting them to local ingredients, climate, and commercial production, helping participants build sustainable businesses.

During her latest visit on 13 June 2026, Ms. Charles conducted Professional Ganache Masterclasses in Lusaka and Kitwe, providing hands-on training in ganache preparation, cake filling and covering, achieving sharp edges, luxury finishes, troubleshooting, and techniques for producing durable, high-quality cakes suited to Zambia’s climate. She also delivered a professional staff training programme for the team at Meraki Café & Pastry Shop in Lusaka, focusing on croissant production, lamination techniques, and French-style pastries to strengthen product quality and consistency.

The Embassy of the Republic of Zambia in France is proud of Ms. Charles’ commitment to transferring her professional knowledge and skills to Zambia. Her work strongly aligns with the Zambia National Diaspora Policy which encourages the transfer of professional expertise from the diaspora into Zambia’s public and private sectors through knowledge sharing, skills transfer and institutional partnerships.

ZAMBIA AND ZIMBABWE SCORE UNESCO CONSERVATION VICTORY FOR MOSI-OA-TUNYA/VICTORIA FALLS

BUSAN, Republic of Korea, Monday, July 27, 2026.

The 48th Session of the UNESCO World Heritage Committee has unanimously adopted the amended decision on the State of Conservation of the Mosi-oa-Tunya/Victoria Falls World Heritage Site, reaffirming the international community's confidence in the joint conservation efforts being undertaken by Zambia and Zimbabwe.

The adoption of the decision follows extensive deliberations by the World Heritage Committee meeting in Busan, Republic of Korea, where the two neighbouring countries successfully reaffirmed their unwavering commitment to safeguarding the Outstanding Universal Value (OUV) of the iconic transboundary World Heritage Site.

In adopting the amended decision, the Committee recognised the continued commitment of Zambia and Zimbabwe to strike a balance between socio-economic development and heritage conservation.

The two countries reiterated that regional economic initiatives, including hydroelectric development proposals and tourism infrastructure projects, will continue to be pursued with strict adherence to the World Heritage Convention, environmental safeguards and internationally accepted conservation standards to ensure the site's Outstanding Universal Value remains intact.

The successful outcome follows the submission by Zambia and Zimbabwe of the State of Conservation Report together with the Draft Joint Integrated Management Plan (2025–2030), which provided the Committee with comprehensive updates on the collaborative management of the property and opened critical discussions on transboundary conservation, commercial development pressures, unauthorised developments and long-term heritage protection.

The decision was announced by the Chairperson of the 48th Session of the UNESCO World Heritage Committee, Mr. LEE BYONG-HYUN of the Republic of Korea, ending nearly a week of anxious anticipation by delegates from both countries. The announcement was met with jubilation from the Zambian and Zimbabwean delegations, who openly celebrated the positive outcome after successfully requesting the opening of the debate.

Zambia also appreciated the kind hospitality of the Republic of Korea for hosting the prestigious 48th Session of World Heritage Committee in Busan.

Both Zambia and Zimbabwe paid tribute to the invaluable technical guidance provided throughout the process by UNESCO's Advisory Bodies, namely the International Union for Conservation of Nature (IUCN), the International Council on Monuments and Sites (ICOMOS) and the International Centre for the Study of the Preservation and Restoration of Cultural Property (ICCROM), whose expertise has continued to strengthen the conservation and management of the World Heritage Site.

The two countries also expressed profound appreciation to States Parties of the World Heritage Committee for their unwavering support during the deliberations, with special recognition extended to Senegal for championing the concerns of Zambia and Zimbabwe and supporting the adoption of the amended decision.

The Zambian delegation was headed by Permanent Secretary in the Ministry of Tourism, Mr. EVANS MUHANGA, while the Zimbabwean delegation was led by Permanent Secretary in the Ministry of Environment, Climate and Wildlife, Mr. SIMON MASANGA.

The adoption of the amended decision marks another significant milestone in the long-standing cooperation between Zambia and Zimbabwe in managing one of Africa's most celebrated natural wonders.

It further reinforces the two countries' shared commitment to preserving the exceptional natural, scenic and ecological values of Mosi-oa-Tunya/Victoria Falls for present and future generations while promoting sustainable tourism and responsible development.
