�In the tiny village of Videmonte, Portugal, artisan baker Manuel Proença keeps an ancient rhythm alive. Using his mother’s sourdough recipe and baking in a 12m² stone oven, he transforms local rye—threshed and milled by hand—into loaves steeped in tradition.
