Year 10 GCSE Food students filled the school corridors with the aromas of their practical cooking lesson as they explored the vibrant cuisine of North Africa. Alongside developing their practical skills, students focused on presentation techniques and considered the authenticity of their dishes, reflecting on traditional ingredients, flavours and cooking methods.
Moroccan cooking is known for its rich flavours, aromatic spices, and a balance of sweet and savoury ingredients. Common ingredients include:
• Spices: cumin, cinnamon, paprika, turmeric, ginger, saffron.
• Fruit: apricots, dates, raisins, prunes, and preserved lemons.
• Fresh herbs: coriander and parsley.
• Staples: couscous, chickpeas, lamb, chicken, and vegetables.
