Shared from another page but this is what farmers like us strive for when producing native & rare breeds, here's 2 lovely steaks from undoubtedly good animals but the Limousin these animals will be big fast growing corn fed animals, with pretty much no marbling in the meat compared to the Hereford which was a grass reared slower growing animal resulting in a far superior texture & flavor, the comments by butchers, chefs & farmers alike had the Hereford beef winning hands down. Quantity & cheap meat does not mean quality.
