It’s that time of year when the woodland is carpeted with wild garlic and thanks to Sally, our lovely foraging neighbour, Richard has been busy washing, chopping and mixing it with butter (and a vegan butter alternative for you non dairy folks!) for use in recipes when we open the Cafe next month. Wild garlic doesn’t last for longer than a few days in the fridge but can be made into pesto, butter or just chopped up and put in freezer bags and frozen for later use. Care should be taken when foraging to ensure you do so sustainably and to make sure you don’t pick any rogue non-edible plants growing in the same area.

Richard’s Wild garlic butter: chop 55g of wild garlic into fine pieces and combine it with 250g of softened salted butter. Feel free to add other herbs to your liking. Season the butter with salt to taste. Wild garlic butter will keep for about a year if frozen.
