Meet the Producer - Finn Lough

We are delighted to welcome Finn Lough to this year’s Burren Bites event as they bring the Foraged Flavours of Finn Lough to the heart of Cavan Burren Park. Guests can look forward to a beautifully curated dish featuring Corleggy Cheese whipped, with beetroot xo dressing, sunflower dukkah spice with wild garlic oil and flowers in a crispy dome.

Leading the experience is Chef, Kristin, whose passion for open-fire cooking and locally sourced produce has shaped the culinary identity of the Lasair Restaurant at Finn Lough. Originally from South Africa, Kristin brings her love of braai and coal cooking to every dish giving guests a truly unforgettable taste experience.

Meet the Curator – John Roche

We are delighted to welcome back award-winning Chef, John Roche and Member of our Regenerative Tourism Business Network as Curator for this year’s Burren Bites Menu.

In partnership with over 20 producers from Cavan and Fermanagh, John is crafting a menu inspired by thousands of years of local tradition. Each course will be served at a unique stop along the trail, showcasing ingredients deeply rooted in the region’s heritage and shaped by its ancient landscape. Every plate is carefully curated using artisan produce from across Cavan and Fermanagh, celebrating the rich local flavours of the Geopark.
