A wholesome oat and blueberry bar with a hint of lemon and a little crunch from the seeds – perfect for a lunchbox or as an on-the-go snack.

Ingredients
• 180g porridge oats
• 20g sunflower or pumpkin seeds.
• Zest 1 lemon
• 150 ml low-fat milk
• 4 medium eggs, beaten.
• 1 tablespoon golden syrup
• 100g blueberries (fresh or frozen - imported frozen berries should be boiled for one minute)
Put it together
1. Preheat the oven to 200°C.
2. Line a 20cm square baking tin with baking paper.
3. Place the oats, seeds, and lemon zest in a mixing bowl. Stir to combine.
4. In a separate bowl, mix the milk, eggs, and golden syrup.
5. Add the wet mixture to the oats and stir until just combined.
6. Add the blueberries and stir gently, taking care not to burst if using the fresh blueberries.
7. Transfer to the lined baking tin and bake for 25-30 minutes until golden brown on top.
8. Once cool enough to handle, remove baking paper and place on a chopping board, cut into 12 squares.
9. Can be enjoyed warm or cold.
