On hot days like this, it's important to keep things simple - but that doesn't mean sacrificing on flavour! Grilled chicken served with crispy potato wedges and fresh stir-fry vegetables. A perfectly balanced, satisfying meal for any day 🍗🥔🥦

Set the oven at Gas Mark 6 200C (400F).

Place the potato wedges in a bowl. Season with the paprika, sea salt and olive oil. Mix well to give the potatoes an even coating.

Place on a baking sheet with a few sprigs of rosemary and bake for 45 minutes.

While they are cooking, prepare the chicken. Heat a heavy pan/grill pan. Season the chicken breasts and drizzles with olive oil and lemon juice.

Place on the hot pan and brown well on both sides, reduce the heat and continue to cook for 15-20 minutes approx, until fully cooked.

For the last 5 minutes heat a large pan or wok. Add some oil and stir fry the vegetables for 2-3 minutes.

Serving Suggestions
Serve the chicken with potatoes and vegetables, drizzle with a little more olive oil and lemon if you wish.

Greek style lamb kebabs with a fresh garlic dressing - high protein, delicious flavour and super easy to add to your BBQ mix this summer.
This recipe is a great way to get in some extra protein with a whopping 50 grams per portion and makes for a perfect lunch the next day if you have left overs.

Ingredients👇

Kebabs:
• 750g lamb, leg or new season shoulder, well trimmed cubed
• Olive oil
• 1 red and 1 green pepper, cut into chunks
• 1 red onion, cut into wedges
• Salt and freshly ground black pepper
• 250ml Greek-style natural yoghurt
• 2 garlic cloves, crushed
• 1 teasp. ground cumin
• 1 teasp. ground coriander
• Juice of 1 lemon

Dressing:
• 2 tablesp. olive oil
• 1 tablesp. fresh coriander, chopped
• 1 tablesp. fresh mint, chopped
• Grated rind of 1 lemon
• 2 garlic cloves, crushed

Strawberry spinach salad with balsamic poppy-seed dressing, the perfect mix of sweet and savoury flavours.🍓
A super fresh seasonal way to add some vibrance to your summer spread and only takes 25 mins to whip up. ✨

Salad
• 300g fresh spinach
• 400g Bord Bia Quality Mark strawberries, washed, de-stemmed and quartered
• 4 scallions, thinly sliced
• 100g goat’s cheese, crumbled (optional)

Croutons
• 120g leftover bread or crusts, cut into 1cm cubes
• 2 tablesp. rapeseed or olive oil
• 2 teasp. dried basil
• Salt and black pepper

Dressing
• 4 tbsp balsamic vinegar
• 3 tbsp cold-pressed Irish rapeseed oil
• 1½ tbsp poppy seeds
• 1½ tbsp honey
• ½ tsp Dijon mustard
• Salt and black pepper

This simple, quick and tasty recipe is perfect for lunch, and makes great use of any leftovers from lamb dinner the night before!

Ingredients:
2 tablesp oil mixed with 1 tablesp curry paste
450g lamb, loin or leg, cut into thin slices
2 peppers,deseeded and sliced
1 red onion, sliced
Mixed salad leaves
Juice of half a lemon
Salt and black pepper
4 pitta breads or french stick

Method:

1. Place the oil and curry paste in a large bowl, add the lamb and mix well together.

2. Heat a large frying pan and stir-fry the lamb for 2-3 mins. Add the peppers, onions, continue cooking and season.

3. Mix the salad leaves with a little extra oil and lemon juice.

4. Pile into the pitta bread. Top with the lamb slices plus the pepper and onion mixture.

5. Serve with a spoonful of Greek style yoghurt or mayonnaise.
