Hawks Rock Distillery

Hawks Rock Distillery Hawk's Rock Distillery is located in the historic Hazelwood Estate, Co. Sligo. You must be of legal drinking age to follow. Drink Responsibly.

Athrú (pronounced Ahh Roo) is an Irish word meaning to change or transform. A progressive brand name, it captures the formative effect of time on a fine single malt as it is transformed from clear raw spirit to rich amber whiskey. It's also a nod to the transformation that has taken place in the surrounding estate over the centuries and its latest reincarnation as a single malt whiskey distillery.

Wood is where a whiskey finds its colour, character and much of its flavour. It's a slow conversation between spirit and oak.

At Hawk's Rock, Garavogue began life in ex-Bourbon American oak before finishing in French Muscat, Sauternes, Spanish PX Sherry and Barbadian rum casks.

Different casks. Different influences. One whiskey.

Helen Mulholland. Master Blender.

Her nose, palate, and patience give our whiskey its character. This is where it happens, among the copper stills at Hawk's Rock Distillery.

Before you even pour a dram, there's a reminder of where it began.

The Hazelwood Estate windmill is embossed onto the cork of every bottle of Garavogue, rooting each whiskey in the place it calls home.

Garavogue 20 year old single malt Irish Whiskey. 🥃

The Nose: A vanilla rush with warm peach, apricot and spun sugar. The sweetness is counteracted by musky floral notes and raisin.

The Palate: Vanilla sweetness with a hint of citrus intertwines with buttery, ripe apples progressing to black coffee, walnut and ground pepper before returning to raisin and sugar cane.

The Finish: Long and warming, full of fresh fruit bursting with sweetness.

Another chapter in Hazelwood's restoration.

2026 has brought further progress across Hazelwood Estate.

Working with HHC Architects & Murcom Conservation, recent projects have included stabilising the gable wall of Windmill House, repairing sections of this historic walled garden and carrying out conservation works to the estate's windmill, helping preserve these important features for future generations.

Every project is another step in bringing Hazelwood back to life.

Every cask leaves its mark.

Garavogue 20 Year Old Single Malt begins its journey in ex-bourbon American oak before spending time in French Muscat, French Sauternes, Spanish Pedro Ximénez Sherry and Barbadian Rum casks.

The result is a whiskey of remarkable balance. Vanilla and warm peach on the nose give way to citrus sweetness and buttery ripe apple, creating a layered tasting experience that rewards a slower sip.

Discover Garavogue 20 Year Old Single Malt via the link in our bio, or visit Foley's Off-Licence or Hargadon Bros to pick up a bottle.

The glasses are empty, but the conversations stay with you.

Thank you to everyone who spent the evening with us at Thomas Connolly's during the Taste of Sligo Food Festival. Sharing great whiskey with people who are genuinely curious about what's in the glass is always time well spent.

Until next time.
