Hawks Rock Distillery

Hawks Rock Distillery Hawk's Rock Distillery is located in the historic Hazelwood Estate, Co. Sligo. You must be of legal drinking age to follow. Drink Responsibly.

Athrú (pronounced Ahh Roo) is an Irish word meaning to change or transform. A progressive brand name, it captures the formative effect of time on a fine single malt as it is transformed from clear raw spirit to rich amber whiskey. It's also a nod to the transformation that has taken place in the surrounding estate over the centuries and its latest reincarnation as a single malt whiskey distillery.

"It is unusual for a whiskey to be blended with this number and variety of casks, but just as the river ebbs and flows, the flavours create a wonderful blend as they weave together in this 20-year-old single malt.” - Hawk's Rock Master Blender, Helen Mullholland

Meet Helen Mulholland. Master Blender at Hawk's Rock Distillery.

In her 30 years at Bushmills behind her, Helen shaped some of Ireland's most acclaimed single malts and premium blends through an instinct for cask selection that few can match.

Now she's writing a new chapter. And we couldn't be more proud she's writing it with us.

Distilling has returned to County Sligo but its roots here go back centuries.

Legend says monks introduced the craft to Ireland as early as 584 AD.

Today, Hawk’s Rock Distillery is proudly reviving that ancient tradition in Sligo once again.

Layered, elegant, and unmistakably Irish. 🥃

Garavogue opens with aromas of vanilla, warm peach and spun sugar, followed by delicate floral and raisin notes. On the palate, citrus sweetness and creamy ripe apple lead into a beautifully fresh, fruit-driven finish.

A whiskey defined by its cask journey - and by time.

Ollie Alcorn, head distiller, doing what he does best, trusting his nose. 🥃

No gadgets, no gimmick, just experience, instinct, and a deep respect for the process. This is how we know it’s ready.
