We are delighted to share that the research article βSynthesis of Postbiotics, Improved Antioxidant Potential and Enhanced Shelf Life of Mango Beverage Probioticated with Lactobacillus helveticus MTCC 5463β has been published in the Journal of Food Science and Technology (Published: 12 May 2026).
The study, authored by Ranjitha K., Dr. Harinder Singh Oberoi, Kushal Kumar Upreti, H. Bharathamma, A. N. Lokesha, Pushpa Chethan Kumar, Rigzen Tsewang, Jash Bhai Prajapati, Mir Asif Iquebal, and Heena Yadav, highlights the development of a functional probiotic mango beverage with enhanced nutritional, antioxidant, and shelf-life properties.
π¬ Key Findings:
β’ Lactobacillus helveticus MTCC 5463 successfully proliferated in ready-to-serve mango beverage, achieving high viable cell counts after fermentation.
β’ The probiotic beverage maintained excellent cell viability and sensory acceptability during refrigerated storage.
β’ Probiotication significantly enhanced total phenolic content and antioxidant activity, improving the beverageβs functional properties.
β’ Increased levels of key vitamins and bioactive compounds contributed to enhanced nutritional value.
β’ The beverage demonstrated improved carotenoid bioaccessibility and strong potential as a commercially viable functional food product.
