Nel 1909 fu interamente ristrutturato in stile neo-gotico. Nel 1916 Carlo Coppedé dipinse le lunette ispirate al Decameron, e nel 1919 Galileo Chini affrescò la “Saletta delle rose”. Da segnalare anche le ceramiche Cantagalli, con stemmi dei comuni toscani. Pini riportò il locale agli splendori del passato, con nuovi affreschi di Annigoni e Guarnieri. Storico luogo di incontro di intellettuali (Leoncavallo, Puccini, Marinetti), il ristorante conserva le tradizioni della cucina toscana.

Founded in 1827 by Pietro Paoli, over almost two centuries the restaurant became a true landmark for Florence and its people: a meeting place that has welcomed generations of Florentines, travelers, artists, writers and illustrious guests.

Its reputation was such that the writer Novelli once recalled how just three words — “We’re at Paoli” — were enough to hear someone reply: “Ah, I know it! I’ve been there too! And who hasn’t?”

Look up while dining at Antico Ristorante Paoli 1827 and you might spot a remarkable piece of history above your head: the bronze bust of Woodrow Wilson, the 28th President of the United States.
Before the Paris Peace Conference in 1919, Wilson visited Italy and was welcomed with extraordinary enthusiasm. Seen as a symbol of hope after World War I, he was celebrated across the country. In Florence, he was even awarded honorary citizenship at Palazzo Vecchio during the historic "American Day" celebrations.

We've been serving Florence at the same tables since 1827, under the frescoes, between the Duomo and Palazzo Vecchio, inside the oldest restaurant in the city.
