The Cardrona Distillery is an artisan Single Malt distillery nestled high in the Cardrona Valley between Wanaka and Queenstown, New Zealand. We believe in using time-honoured traditional methods of hand-crafting spirits from malted barley. All of our spirits are made from scratch, starting with just malted barley, water, and yeast. Our barley is grown on the Canterbury plains, the variety is essential for making great Single Malt. Our water is from the highest alpine pass in New Zealand and embeds the character of our land into our spirits.

Casks marked 2026, with their time in the barrel hall only just beginning. Where they go from here will be shaped by the spirit, the wood and the years they spend maturing in our alpine environment.

For now, 2026 is simply their first chapter, sitting alongside casks that have been here for years. New spirit and old whisky - generations of Cardrona Single Malt maturing side by side.

Visionary Head Chef Jack Foster, his exceptional team of chefs and our front-of-house stars bring extraordinary care, creativity and delight to every service.

Our restaurant truly is one of Central Otago’s hidden gems. Guests consistently describe the creativity of the flavours, the presentation of each dish and the overall dining experience as exceptional. It means so much to be recognised at this level for exactly what our team strives to deliver.

Meet Roaring Meg.

Named for the turbulent Central Otago alpine stream not far from the distillery. She has a gentler counterpart, appropriately named Gentle Annie.

Our pair of handmade Forsyths copper pot stills were built in Scotland especially for Cardrona Distillery. At 2,000 and 1,300 litres, they're small by whisky-making standards and integral to the character of The Cardrona Single Malt Whisky.

Scottish craftsmanship, Central Otago names, very much at home here.

At Cardrona Distillery, sustainability is part of everything we do. Our spent grain (draff) goes straight from the mash tun to feed the deer, sheep, and cattle of the historic Cardrona Valley Farm Station – nourishing the land and reducing waste.
