Celebrate the opening of Lotus Rising, an exhibition showcasing the art of Te Ara Korowai members.

The exhibition opens on Friday 27 February 11am at Toi MAHARA, 20 Mahara Place, Waikanae and runs through until May.

A delicious creamy cabonara pasta was on the menu for today to celebrate Vickys birthday. We made a creamy sauce with tempered egg yolks, garlic and cream which was tossed through pasta, spiralled zucchini and chicken.

For dessert, Vicky made a delightful chocolate cake which was served with fresh berries and fruit salad. Yum!

Today we started our 'chefs in the kitchen' series where each of our members gets the opportunity to showcase one of their own recipes and share it with the group.
Today Rumki made her potato curry family recipe. She grew up in India eating this dish regularly along with home-made bread. What a treat- it was delicious!!! Also very economical to make at roughly only $1 per portion. All you need is garlic, onion, ginger, potatoes, coconut cream and spices! Coriander is optional.

Here goes her recipe-:
Heat 1/4c oil in a large pan and add 4 cardamon pods until they sizzle. Add 2 onions, a k**b of ginger and 6 cloves garlic and saute. Add approx 500g cubed potatoes, 2 T curry powder, 1 t cardamom powder, 1t Cumin and salt and pepper to taste. Add water and 1can coconut cream and cook until potatoes are tender. At thr end, add 2x chopped tomatoes and cook for another 5 mins. Sprinkle with coriander and a squeeze of lime!

A very busy cooking class with 15 people navigating the space in our little kitchen! We pulled off a delicious meal using some basic ingredients -we decided on enchiladas to use up all the wraps we had. These were stuffed with marinated chicken, onion, grilled Capsicum and topped with homemade tomato ragu and cheese before popping under the grill. Fresh tomato salsa along with lots of veg as an accompaniment. Yummo!

We even pulled off a couple of banana cakes which will be Iced with lemon icing and stuffed with cream for our AGM!

Today we cooked up a feast for the eyes and for the tummy!! We were spoilt by kaibosh with a little smoked salmon so we thought we would utalize a slightly stale baguette to make crostini topped with lots of goodies!!

We also recieved some fresh pasta sheets. These were used to improvise a lasagne using lamb meatballs and white sauce made with milk powder. Our rich homemade ragu was flavored with garden Rosemary and fennel seeds.

The team also conjured up a magnificient rice salad packed with all the colours of the rainbow, and all the herbs from our garden. The orange, lemon and lime zest and juice took the dressing to another level. Yum!!

If you have been wondering what we made with all the delicious bounty we posted earlier, here is some inspiration from our cooking class that may help you with tomorrow dinner.....

Mediterrenean chicken and muchroom pasta bake made by sautéing off onion and garlic, adding herbs, chicken and mushrooms, 2 tins of tomatoes, chicken stock and 1 tin of evaporated milk. Toss with 1 bag of cooked pasta and topped with cheese before popping under the grill and sprinkling with fresh basil

Roasted red peppers and courgettes tossed in a herby lemony vinaigrette. Cauli and lots of greens.

Delicious, nutritious and packed with Yum!!!
