A Simple Celebration of Flavors: The 3rd Baddek ni Aring Festival Opens
The crisp December air carried the scent of rice cake as the 3rd Baddek ni Aring Festival officially opened its gates today, December 1st, 2024. Unlike previous years, this year's opening ceremony eschewed grand spectacles, opting instead for a heartwarming and intimate celebration focused on the heart of the festival: the Kankanen Culinary Contest. The simplicity was refreshing, allowing the true spirit of the event – community and culinary excellence – to shine through.
The ceremony took place in the central plaza, a space usually bustling with market activity during festivals, now transformed into a stage for the day’s events. A modest stage, with the boothd adorned with vibrant locally-sourced bougainvillea plants teeming with flowers was the focal point. Rhe usual program preliminaries was done. The festival song was launched. This was followed by a brief welcome address by the festival’s focal person, who spoke of the festival's growth and the importance of preserving the culinary heritage of the region. Her words were simple, direct, and infused with genuine warmth, resonating deeply with the assembled crowd.
The highlight of the opening ceremony, and indeed the day, was the unveiling of the Kankanen Culinary Contest. Unlike larger culinary competitions, this contest celebrated the simplicity and authenticity of Kankanen cuisine, a traditional style emphasizing local ingredients and time-honored recipes. This year's theme, "Flavors of Our Heritage," encouraged participants to showcase dishes that reflected the rich history and cultural identity of the region.

Mr. Jason Hilario, a known social media influencer and food critic, Ms. Jennie Apilas, Provincial Nutrition Officer and Ms. Maricris Trillana,
their introductory remarks, emphasized their appreciation for the authenticity and artistry of Kankanen cuisine, highlighting the importance of preserving traditional recipes while also fostering innovation.
Instead of lengthy speeches, the ceremony included a symbolic act – the launching of the festival song : Baddek ni Aring sung by a representative from the younger generation. This act served as a powerful metaphor for the festival's aim to cultivate and nurture their culinary heritage for future generations. Baddek ni Aring also symbolizes resilience and growth, and it stands as a testament to the community’s commitment to preserving its traditions.
The culinary creativity of San Eugenio shone brightest at the awarding ceremony, earning them the grand prize for their innovative buyos dishes: savory balls, creamy pearl-adorned buyos, and a unique takoyaki-inspired buyos. Dulao's resplendent p**o recipe secured first runner-up, while Sta. Rita West's creative kutchinta ensemble claimed second runner-up honors.
The overall atmosphere was one of relaxed camaraderie, a stark contrast to the often-overwhelming scale of larger festivals. The success of the 3rd Baddek ni Aring Festival opening ceremony lay not in its grandeur, but in its authenticity and genuine celebration of community, culture, and the delicious flavors of Kankanen cuisine.
