Punchy Palateโs journey in June 2023 with Tapuey didnโt begin in a lab or a culinary school. It started at home where Ms. Amilof was raised in a family where Tapuey was always present during rituals and celebrations, she knew its cultural valueโbut she saw its culinary potential, too. She always thought Tapuey could be more than just a drink; it has depth, character, a tangy sweetness that could elevate flavors if used right.
In a city where food trends come and go with the fog, Punchy Palate is building something bold, something rooted, and something unquestionably delicious and is on a mission not just to serve food, but to redefine how the Cordilleran heritage is tasted. The secret weapon, Tapuey, the traditional Cordilleran rice wine.
The Rough Road to Reinvention
Turning a traditional rice wine into a lineup of versatile products wasnโt as easy as pouring it into a sauce pan. One of the biggest challenges was balancing alcohol content with shelf stability and food safety. Since Tapuey is fermented, its unpredictability made it hard to scale recipes. Through the skilled hands of the chef and the insights of Ms. Amilof, Punchy Palate was able to come up with Tapuey Ice Cream in two flavors: red and white. A line of velvety, buzz-worthy frozen treats that offered both refreshment and a cheeky kick as how one of the food tasters described Tapuey Ice Cream.
Sweet Success with Tangy Twists
It took months of tweaking ratios, controlling temperature, and partnering with local food tech experts just to get the acidity of the dressings right. But giving up wasnโt an option as she wasnโt just making condimentsโshe was preserving a legacy.
Eventually, all that persistence paid off. The Tapuey-infused dressingโand other flavors (passionfruit, strawberry, and lemon)โwere born. Locals loved the way they brightened up salads, grilled meats, and even rice bowls. Tourists started buying bottles to take home.
More Than a Kitchen: A Community Laboratory
Punchy Palate credits much of its progress to collaborationโwith local farmers, Department of Trade Industry Baguio-Benguet, taste testers, and the chef and its own staff who double as taste testers and honest critics. People didnโt expect alcohol in ice creamโbut they kept coming back for more. Today, Tapuey (red and white), Passion Fruit Ice Cream, and Strawberry Ice Cream are among the top-selling flavors at Punchy Palate. Theyโve even inspired the restaurantโs cheeky coffee concoction: Tapuey-infused coffeeโa rebellious brew thatโs part dessert, part pick-me-up.
The Punchy Future
As Punchy Palate relocates to the SB Building, Hotel Veniz, Session Road, the owner sees it as a chance to go biggerโbut stay grounded. The new location will feature an expanded shelf of artisanal Tapuey condiments, including fruit-infused vinegar, Tapuey atchara, and experimental hot sauces. She also plans to conduct Tapuey tasting flights, pairing the wine with curated small plates. The dream is to make Tapuey a staple in every Filipino table, not just during rituals, but every dayโwhether it's in your salad, your dessert, or your Sunday roast.
Legacy on a Plate
For Punchy Palate, success isnโt measured by profits alone. Itโs about turning ancestral knowledge into everyday magic, bridging the old and the new, one bold flavor at a time. Tapuey has always been part of the Cordilleran story; it is just given a new chapter at Punchy Palate Gastropub.
