In coconut processing for virgin coconut oil (VCO), by-products are often overlooked and discarded. Through the Surigao del Norte State University Food Innovation Center, these resources are transformed into value-added beverages such as Choco Whey Drink, CocoWhey Soda, Sparkling CocoWhey Probiotic Drink, and Sparkling Coconut Water Soda.

More than creating new products, these innovations show how circularity can reduce waste while creating new livelihood and income opportunities for local farmers and processors.

Because sometimes, what the coconut leaves behind can become a new opportunity.

When the waters rise, farming becomes more than a challenge โ€” it becomes a question of how communities can continue putting food on the table.

In Barangay Sabang Gibong, Talacogon, Agusan del Sur, residents face the realities of flooding and a changing climate that threaten conventional ways of growing food. But where challenges rise, so does innovation.

Through floating gardens made from locally available materials, the community has found a way to keep vegetables growing even as floodwaters rise. More than a means of producing food, this simple yet innovative approach provides additional sources of income and strengthens the communityโ€™s food security.
