Not every Chief Cook starts with a chef jacket, a title, or recognition. Some begin behind the sink washing plates, cleaning kitchens, and quietly dreaming of something bigger. That is exactly where the inspiring journey of Polynaire P. Sandoval began.
Before commanding international ship galleys and leading maritime kitchens, Chef Polynaire first learned the true meaning of hard work as a dishwasher at Kamayan Restaurant. Day after day, surrounded by heat, pressure, and endless tasks, he discovered that success in the culinary world is not built overnight it is earned through patience, humility, discipline, and consistency.
From there, his journey became a story of relentless growth. He worked his way through respected restaurants including La Piadina Italian Restaurant and Sumosam Japanese Restaurant, where he sharpened his skills and developed deep knowledge in European, Indian, and Filipino cuisine. Every kitchen became his classroom, every challenge became a lesson, and every opportunity became a stepping stone toward greatness.
But Chef Polynaireโs ambition did not stop on land.
Driven by passion and courage, he entered the maritime culinary industry and embraced the demanding life at sea. From serving onboard Magsaysay Star Cruises as Kitchen Steward and Cook, he continued climbing the ranks through international vessels and shipping companies eventually becoming a respected Chief Cook onboard major vessels under PTC Container Ship, BSM Bulk Carrier, and now Anglo Eastern Tanker.
For over 20 years, Chef Polynaire has dedicated his life to feeding crews from different nationalities and cultures across the worldโs oceans. Through rough seas, long contracts, homesickness, and high-pressure galley operations, he remained committed to one mission: serving quality food with pride, professionalism, and heart.
Today, Chef Polynaire P. Sandoval stands as living proof that no dream is too far for those willing to work for it. His story reflects the spirit of many Filipino seafarers resilient, hardworking, world-class, and deeply passionate about their craft.
