Pesto:
Basil-based sauce that originated in Genoa, Italy. It also contains garlic, olive oil, and a hard cheese, such as Parmesan & traditionally pine nuts. We used walnuts in ours yesterday, but a really great substitute would be Louisiana pecans!

Roasted Walnut & Basil Pesto:
METHOD:
1. Toast unpeeled garlic cloves & walnuts in small skillet. Remove and peel garlic.
2. Put in food processor.
3. Add basil, cheese, and olive oil.
4. Blend until smooth - season with salt & pepper. Add white pepper and/or red pepper flakes, if desired. Transfer to bowl and stir.
INGREDIENTS:
6 cloves garlic
1/2 cup walnuts
4 cups fresh basil, packed
1/2 cup Parmesan cheese (grated or shredded)
1 cup extra virgin olive oil
Salt & Pepper, to taste
Ground white pepper and/or red pepper flakes, if desired.
Why did we list the method before the ingredients???
Because reading the instructions in the recipe is VERY important and this is a mistake that most KidChefs make - not reading the recipe all the way through before starting.

Smoked Salmon & Avocado Toast - Be adventurous with breakfast!
Whole wheat bead - lightly toasted
1 Tablespoon low-fat cream cheese - “Smeared”
3 slices of fresh Avocado
1.5 ounces (or a KidChef size handful) of smoked salmon

Very tasty with heart healthy fats from the avocado and salmon! Yum!
