Proud moment for our family and the future of the trade. My grandson, Denver Mathews representing the fifth generation—is currently learning alongside his uncle Kenny, gaining hands-on experience in the art of butchery, including splitting a beef.

With a strong work ethic and passion for the craft, Denver is already setting his sights on the future. Over the next 4–5 years, he plans to continue developing his skills and ultimately take that knowledge out of state to start his own meat business. The Legacy continues!

We received a call this evening for an emergency beef harvest. We always do our best to accommodate last-minute requests because customer service is extremely important to us. Tonight, I even had to bring my little helper along to help get the job done.

For all your butchering needs, give us a call and we’ll make sure it gets taken care of.

On the table are two halves of beef — both fully processed into steaks, with the trim, bones, fat, and overall yield displayed.

One is grain-fed, and the other is grass-fed.

Take a close look at the color, marbling, fat content, and overall yield. Can you tell which is which?

Drop your guess in the comments ⬇️

We love educating our customers on the differences so you can make the best choice for your family and your freezer.

At Barstow Country Butchering, we believe in educating our customers — not just processing your animals.

Today we’re highlighting the difference between a show-quality pig and a homegrown pig after butchering. From muscle structure to fat distribution, each one finishes out a little differently, and that can impact your final cuts.
