Our version of a candy salad 🫶🏼🍭🍫🍬

This colorful bowl is packed with fiber, plant protein, heart-healthy fats, and vitamin A, making it a warm and nourishing choice for cooler autumn days. 🍂

Ingredients
🍠 2 medium sweet potatoes, peeled and cubed
🍠 1 can (15 oz) chickpeas, rinsed and drained
🍠 2 tablespoons olive oil
🍠 1 teaspoon smoked paprika
🍠 1/2 teaspoon ground cumin
🍠 1 cup cooked quinoa or brown rice
🍠 2 cups baby spinach
🍠 1 ripe avocado, sliced
🍠 1 cup cherry tomatoes, halved
🍠 1 lime, cut into wedges

Instructions
✅ Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
✅ Toss the sweet potatoes and chickpeas with the olive oil, paprika, and cumin.
✅ Spread them on the baking sheet and roast for 25 to 30 minutes, turning halfway, until golden and tender.
✅ Divide the quinoa and spinach between two bowls.
✅ Top with the roasted sweet potatoes and chickpeas, avocado, and tomatoes, then finish with a squeeze of fresh lime. 🌿
