Today, I am participating in the Ouachita District Family & Consumer Sciences (FCS) New Agent Training in Garland County, where I’m building my “agent toolbox” for Saline County.

Lizzy, UADA Social Media Manager, did an excellent job helping us understand how to strengthen our social media presence as agents. We learned valuable tips and techniques to improve the quality and impact of our posts.

Today, Pulaski and Saline County FCS Agents present Everyday Essential: Selective Eatings for Adults and Youth at the North Little Rock Library-Argenta. Participants learned how to support selective eaters of all ages and the difference between being a picky eater vs. a selective eater. Some participants also volunteered to do our tasting activity. We also had guest FCS Agents from Perry & Clark County.

Today Saline & Pulaski Count Family and Consumer Sciences Agents completed our Dual County Financial Literacy Education Program, My Money & Me, at the Bryant Library.

Participants learned what makes a budget, how to prioritize bills, the difference between needs and wants, and how to track their spending. Did you know that GROSS income minus (-) DEDUCTIONS equals (=) your NET INCOME or TAKE-HOME PAY? This is the amount used to cover your monthly expenses. Creating a spending plan (total income - total expenses)is vital to having a monthly budget to help you and your family with saving.

Participants also receive tools to help them with their monthly spending plan. We are looking forward to hosting our next classes soon!

This Wednesday, the Midway Club of Saline County Extension Homemakers proudly announced a $600 donation to the summer cereal drive benefiting the Arkansas Foodbank!

This contribution reflects the heart of Extension Homemakers, neighbors coming together to serve their communities and support families in need. Through teamwork, dedication, and a shared commitment to helping others, Extension Homemakers continue to create opportunities, enrich lives, and strengthen communities across Arkansas.

Today, Extension Homemakers proudly includes more than 3,200 members in over 320 clubs statewide, all committed to education in Family and Consumer Sciences, leadership development, and meaningful community service.

Saline County Extension Homemakers are busy preparing pies and sharpening their food safety skills as they get ready for this year’s county fair kitchen!

Members learned safe practices for preparing, cooking, serving, and storing food—knowledge they can use to help keep family, friends, church groups, and communities safe at potlucks, picnics, and family gatherings.

Beyond the learning, the fellowship and friendships shared among members make Extension Homemakers a special group dedicated to serving our community.

Did you know that low-acid foods should NOT be canned with a water bath canner? It's all about food safety!

- Low Acid Foods
Pressure canning is the only safe way to preserve low-acid vegetables (such as green beans, corn and carrots), meats and most mixtures of foods. As water boils to steam in a sealed pressure canner, the temperature increases to 240 F or higher, temperatures necessary to destroy the spores of Clostridium botulinum.

- High Acid Foods
High-acid foods can be preserved safely when they reach temperatures provided by a boiling water-bath canner. To kill harmful molds, yeasts and some bacteria, processing using the boiling water-bath method ensures the safety of preserved produce. However, this method does not provide high enough temperatures to destroy botulinum spores in low-acid foods such as vegetables. Steam canners may also be used for high acid foods like pickles, salsa, jams, jellies and fruits.
