I’m once again reminding you to not throw out your perfectly useful brown bananas and make something delicious with them instead: smoothie, banana nice cream, banana pudding, or this banana bread —>

Recipe:
-3-4 large ripe bananas
-1/4 cup brown sugar
-2 tbsp white sugar
-2 tbsp butter or oil
-2 eggs
-1 tbsp vanilla extract
-1 tsp cinnamon
-1 tsp baking soda
-1/2 tsp salt
-2 cups flour
-1/2 cup chocolate chips

*Mash your bananas and add all the ingredients to a medium mixing bowl. Stir until well combined. Fold in chocolate chips. Bake in the oven for 45 minutes at 350 degrees.

June is fresh fruit and vegetables month! 🥦🍉
Most people don’t eat nearly enough fruits and vegetables in their diet despite knowing how good they are for us. How can we make getting more fruits & veggies easier? Try these ideas!
-Keep them visible: for example, keep a fruit basket on the counter!
-Prep them beforehand: cut up your fruits and veggies at the beginning of the week so they’re ready to be eaten on the go.
-Use convenient options: Don’t be afraid the eat canned, dried, or frozen fruits and vegetables if that works better for your situation. They are still great for you!
-Add them to things you already enjoy: vegetables on pizza still count towards your daily intake!
-Make smoothies: sometimes drinking fruits and vegetables is easier than eating them.
-Start dinner off with a salad or vegetables side dish to ensure eat some before you fill up on other foods.

These chickpea smash tacos are SO fast to make and packed with fiber and protein 💪

Make them the next time you need a fast meatless meal to make 🌮

Recipe:
-1 can of chickpeas, drained
-seasonings to desired flavor: salt, pepper, garlic powder, onion powder, and some ltalian seasoning
-1 egg
-1/3-1/4 cup of bread crumbs
-tortillas
-Caesar salad mix

*in a food processor, combine the beans, seasonings, eggs, and breadcrumbs. Mash this mixture onto the tortillas in a thin layer. Place the tortilla and chickpea mixture into a pan with over medium heat. Cook for about 3 minutes and then flip and cook on the other side for around another minute. Take the tortilla off skillet and put Caesar salad in it to make the wrap.

The Create Better Health Summer Challenge is a 13-week program designed to help you build healthy habits, stay active, and improve overall well-being.

Track your progress, stay motivated through community support, and finish strong with a celebratory 5K event available both in-person and virtually! 100% of the proceeds for this event will support Create Better Health Hub’s efforts to improve food access and provide nutrition education across Utah.

The challenge begins on June 21, 2026 and ends on September 23, 2026.
The in-person 5K event will be on Saturday, September 12 @ 8:00 AM at Utah State University's campus in Logan, Utah. There will also be a virtual 5K option.

Whether you need to use up your zucchini before it goes bad or you want to make a vegetable dish your family will love-this recipe is for you!

Zucchini Parmesan Crisps

-1 large zucchini
-2-3 tbsp olive oil
-1/3 cup bread crumbs
-1/3 cup Parmesan cheese
-1/4 tsp salt and pepper
-1/4 tsp garlic powder
-1/2 tsp thyme (dried or fresh)

Cut your zucchini into thin slices and lay them on a pan lined with parchment paper. Brush each slice with olive oil. Mix your bread crumbs, cheese, and seasonings together and sprinkle evenly on top. Bake for 20 minutes at 400 degrees.
