These simple Cinnamon Apple Snacks are always in the easy snacks rotation, especially during the Fall.
Apples are a very healthy snack, packed with vitamin C and antioxidants. They are a satisfying and healthier alternative to sugary treats.
These snacks have a crisp, crunchy texture you will love biting into.

Ingredients

2 apples
1 tsp ground cinnamon
½ tsp coconut sugar

Instructions

Wash the apples, then remove the cores and cut them into 1-inch thick slices.
Next, add the apple slices into a large Ziploc baggie and sprinkle the cinnamon and coconut sugar on top. Zip the bag and give it a good shake, ensuring the slices are all well coated.
Enjoy right away or pop the bag into the fridge and let them chill for an hour.

Meet Iris, our Breastfeeding Peer Counselor! 💛

Since August is National Breastfeeding Month, we wanted to introduce you to Iris Rountree, our Breastfeeding Peer Counselor with Yancey County WIC!

Iris grew up right here in Yancey County and graduated from Mountain Heritage High School in 2013. She later attended Warren Wilson College, where she studied studio art. While in college, she also worked with doula organizations and received training as a doula.

After college, Iris spent time traveling and working on farms in Europe, Canada, and across the United States. She also lived in California for a few years before moving back home to Yancey County with her husband in 2022.

Iris became a mom in 2024 and breastfed her son for two years. Her own experience as a mom is one of the reasons she enjoys helping other moms during their breastfeeding journey.

As our Breastfeeding Peer Counselor, Iris can help answer questions, offer encouragement, and provide support along the way. She can help whether you are getting ready to breastfeed, just starting out, pumping, going back to work, or simply need someone to talk to.

💛 Breastfeeding support is available through Yancey County WIC.

Black Bean Quesadillas are a quick, flavorful, and satisfying meal that comes together in minutes. Packed with seasoned black beans and melted cheese inside crispy tortillas, these quesadillas are perfect for lunch, dinner, or even a hearty snack.

They’re budget-friendly, easy to customize, and great for busy weeknights when you want something simple but delicious.

Ingredients

4 flour tortillas
1 cup corn, (canned)
15 oz black beans
1/2 teaspoon cumin
2 cups colby jack cheese, (shredded)
2 teaspoons butter

Instructions
Start by draining and rinsing corn and black beans then place in a small mixing bowl. Season with cumin and mix.
Heat skillet over medium heat and 1/2 teaspoon of butter. Place a tortilla in the skillet and add 1/2 cup of shredded cheese along with a spoonful or two of your seasoned beans and corn. Fold in half and allow to cook for a few minutes before flipping.
Cook until cheese is melted then remove from the skillet. Repeat with the remaining tortillas.
