Isan Cuisine: Where Sticky Rice, Fiery Heat and Fresh Herbs Meet

Thailand’s northeastern region, known as Isan, comprises twenty provinces spread across the Khorat Plateau. Bordered in part by the Mekong River, the region has been shaped by centuries of cultural exchange across the Mekong basin, particularly with neighbouring Laos. Unlike many dishes from central and southern Thailand, traditional Isan cuisine generally relies less on coconut milk and sugar, allowing its spicy, sour, salty and fermented flavours to stand out.

Isan food is often introduced simply as “spicy food”, but heat is only one part of its character. The cuisine is equally defined by sharp acidity, savoury fermentation, toasted aromas, fresh herbs and the smokiness of charcoal-grilled meat.

🍚 Sticky Rice Is the Everyday Staple

Sticky rice, known in Thai as khao niao, is the foundation of the Isan table — not merely a side dish served beside the main food.

It's made differently from ordinary Thai rice. Sticky rice is soaked for hours, then steamed in a woven bamboo basket rather than boiled, until it turns soft and chewy. It arrives at the table in a kratip, a small lidded bamboo container that helps retain the warmth and softness of sticky rice.

🐟 Pla Ra Is a Flavour Foundation

Pla Ra (ปลาร้า) is fermented freshwater fish, and it's the ingredient that most defines Isan cuisine.

Its aroma can be surprising to first-time diners, but pla ra should not be understood merely as something “strong-smelling”. Used carefully, it provides the deep savoury foundation behind many Isan dishes.

🌶️ Jaew Is an Essential Companion

A grilled Isan meal is rarely complete without jaew, a family of intensely flavoured chilli dips.

Jaew does more than add heat. Its acidity cuts through the richness of grilled chicken, pork or beef, while toasted rice powder echoes the roasted aromas created by charcoal cooking.

One of the best-known versions is nam jim jaew, commonly made with dried chilli, fish sauce, lime juice or tamarind, shallots, herbs and toasted rice powder.

An Isan meal is often built around contrast.
A basket of warm sticky rice may be surrounded by spicy salads, smoky grilled meats, hot-and-sour soups, chilli dips, fresh herbs and raw or lightly cooked vegetables.

Each bite moves between flavours — spicy, smoky, sour and fresh — often combined with sticky rice, grilled meat or salad in the same mouthful.

Balance is not found in a single dish, but in how everything on the table is eaten together.

- Start with Sticky Rice
Pinch off a small piece of sticky rice and gently shape it into a bite-sized portion

- Eat with Your Hands
When sharing food, use the serving utensils provided rather than dipping rice or personal cutlery directly into a communal dish.

- Beware the Heat
Isan food can be extremely spicy, particularly som tam and chilli dips. However, spice levels are often adjustable.

“Mai phet” — Not spicy
“Phet nit noi” — A little spicy
“Phet klang” — Medium spicy

- Say “Saep Lai!”

In the Isan language, “saep” means delicious, while “lai” means very or a lot.

Saying “Saep lai!” is a cheerful way to say that the food is very delicious.

🥗 Som Tam Pla Ra

Som tam pla ra, a signature Isan dish, is made by pounding shredded green papaya with chillies, tomatoes, lime or tamarind, and fermented fish seasoning.

The papaya stays crisp while absorbing a spicy, sour, salty and deeply savoury dressing with fermented complexity. It is usually eaten with sticky rice, grilled chicken and fresh vegetables in a shared meal.


🌿 Larb

Larb is a spicy minced meat salad with lime juice, fish sauce, chillies, shallots, herbs and toasted rice powder.

It can be made with pork, chicken, beef, duck or fish. Khao khua (toasted rice powder) adds aroma and texture. Fresh mint, coriander and spring onion balance the richness, while lime and chilli keep it bright. Usually eaten with sticky rice and vegetables.


🍲 Tom Saep

Tom saep is a hot-and-sour herbal soup with a clear, fragrant broth of chilli, lime and herbs.
Commonly cooked with pork ribs or offal, it also uses lemongrass, galangal, lime leaves and shallots for aroma.

Light yet bold, it refreshes the palate and pairs well with grilled meat and sticky rice. The word saep is commonly used in Isan to describe food that is delicious, flavourful or satisfyingly bold.


🥩 Kor Moo Yang
Kor moo yang is grilled pork neck marinated with garlic, coriander root, pepper, fish sauce and a touch of sugar, then cooked over charcoal until lightly charred.
The meat remains tender and juicy, with a rich flavour and smoky aroma. Served with sticky rice, som tam and nam jim jaew, it is a classic Isan combination.

Southern Thai cuisine is known for its bold flavors, combining fiery chillies, sharp souring ingredients and concentrated curry pastes. Shrimp paste and fermented seafood add deep savoriness, while fresh turmeric brings a distinctive golden color and warm, earthy aroma.

Three elements are especially important to understanding the Southern table.

✨ Turmeric Is a Golden Signature

Fresh turmeric is one of the defining ingredients of Southern Thai cooking. It gives curries, soups, marinades and stir-fries their vibrant golden-yellow color, together with a warm, earthy and slightly peppery aroma. It is especially prominent in sour curries and seafood dishes, where it combines naturally with chillies, garlic, lemongrass and shrimp paste.

🥒 Phak Naw Completes the Southern Table

Southern curries and chili relishes are commonly served with phak naw, a generous selection of fresh or blanched vegetables and herbs.

Cucumber, Thai eggplants, pea eggplants, acacia shoots and stink beans provide freshness and crunch, helping to cool the chilli burn and refresh the palate between bites.

🐟 Nam Budu Brings the Flavor of the Sea

Nam budu is a traditional fermented fish seasoning associated particularly with Thailand’s deep South and Malay-influenced food culture. Usually made by fermenting small sea fish with salt, used as a seasoning or sauce and is an important component of dishes such as khao yam, a Southern rice salad served with finely sliced herbs, vegetables and aromatic ingredients.

One of the best ways to explore Southern Thai food is at a khao kaeng pak tai, or Southern rice-and-curry shop.

Diners choose from a wide selection of ready-cooked curries, stir-fries, fried dishes, relishes and vegetable sides. These may be served over rice or shared at the center of the table.

1. Moo Hong 🐷

Moo Hong is a Phuket-style braised pork dish reflecting the island’s Hokkien Chinese and Peranakan culinary influences.

Pork belly is slowly braised with soy sauce, garlic, sugar and black pepper until tender. The result is a rich, slightly sweet and deeply savory dish with a distinctive peppery warmth.

2. Bai Liang Pad Khai 🥬

Bai Liang Pad Khai is a popular stir-fry made with tender young bai liang leaves and egg.

Southern Thailand is home to several distinct curry traditions, each offering a different balance of heat, sourness, texture and richness.

🍋 Sour Curry — Gaeng Som

Southern-style Gaeng Som is a hot and sour curry known for its vivid yellow color and clear, broth-like consistency.

Fresh turmeric and chillies form the base of the curry paste, while tamarind provides sharp sourness. Fish, shrimp or other seafood may be cooked with vegetables such as green papaya, bamboo shoots or lotus stems. Without coconut milk to soften the flavors, the heat, sourness and turmeric aroma remain bright and direct.

🌶️ Dry Curry — Khua Kling

Khua Kling is known as a “dry curry” because it is prepared with little to no added liquid and typically contains no coconut milk.

Khua Kling is made by dry-frying minced pork, beef or chicken with a concentrated Southern curry paste until the moisture evaporates and the aromatic paste thoroughly coats the meat. Chilies, turmeric and herbs create its intensely spicy flavor, while finely sliced makrut lime leaves add a fresh citrus aroma.

🐟 Fermented-Fish Curry — Gaeng Tai Pla

One of the most distinctly Southern curries, Gaeng Tai Pla has its roots in the region’s fishing communities.

Its defining ingredient is “tai pla”, traditionally made by fermenting fish entrails with salt.
The curry is usually prepared with chillies, turmeric, herbs and vegetables such as bamboo shoots and eggplants.

🥥 Coconut Curry — Massaman

At the richer and gentler end of the spectrum is Massaman curry.

Massaman combines coconut milk with warm dried spices such as cinnamon, cardamom and cloves. Meat is slowly cooked with potatoes, onions and often peanuts, while tamarind and palm sugar help create a rounded balance of sourness and sweetness.

Surrounded by forested mountains and shaped by the traditions of the former Lanna Kingdom, Northern Thailand has developed a cuisine with a character all its own.

Historically, its inland geography meant less access to marine seafood, while the cooler climate made coconuts less abundant than in Central and Southern Thailand. Northern cooking therefore came to rely more heavily on freshwater fish, meat, seasonal vegetables, herbs and forest produce.

🍚 Sticky Rice Is the Staple

Rather than steamed jasmine rice, glutinous rice is the traditional staple, kept warm in a woven bamboo container, often called a kratip or rice basket. Sticky rice is usually shaped into small portions by hand and eaten together with curries, grilled meats, sausages and chilli dips.

🌶️ Chilli Dips Are Central to the Table

Northern Thai meals are rarely complete without nam prik, or a pounded chilli dip, served with fresh or blanched vegetables, crispy pork rinds and grilled meats.
