"What in the world is that?!"

That's called corn s**t! And, rumor has it, it is many times more valuable than normal ears of corn. Early stages of common corn s**t are eaten as a delicacy in Mexico and other Central American countries, and called huitlacoche.

Common corn s**t is a fungal disease that infects most parts of the plant. But when it infects the corn kernels it becomes this odd looking structure. The fungal spores can survive for several years in the soil and corn residue. Spores are spread by wind or through water splashing up onto young plants.

If this bonus corn growth isn't for you, planting resistant corn varieties whenever possible will help avoid the infection. Once galls have formed, treatment is not possible. Most farmers end up cutting and burning or burying the infected crop to avoid it spreading to other plants.
