The water stays 72 degrees no matter what the calendar says. The light gets a little softer in the afternoons. The crowds thin out just enough. October at De Leon Springs is the quiet season, and it might be the best one.

Long before it was the Old Sugar Mill Pancake House, this building was part of an actual working sugar mill on the property. The griddles built into your table today sit inside a structure with roots stretching back to the 1800s. You're not just having breakfast, you're sitting inside Florida history.

American alligators sunning on the bank. Herons standing still as statues in the shallows. Turtles stacked on a half-sunk log like they're posing for it. Our River Cruise winds through Lake Woodruff National Wildlife Refuge, and every trip out looks a little different.
