Congratulations to the 2026–2027 NEHA–FDA RFFM Grant Program grantees!

This year marks a major milestone, we received the highest number of applications since administering the program in 2022, reflecting the growing commitment to strengthening retail food safety nationwide.

Through this cycle, nearly 630 projects were funded, distributing $5.36 million to support 317 state, local, tribal, and territorial (SLTT) programs. These investments directly strengthen inspection programs, build workforce capacity, and advance efforts that help prevent foodborne illness in communities across the country.

Thank you to every applicant and grantee for the critical work you do every day to protect public health.

Are you storing your ground beef properly?

From refrigeration timelines to common warning signs, Melissa Vaccaro explains why time and temperature matter more than appearance alone when it comes to food safety.

"There are some warning signs, including a sour or off odor, a slimy or sticky texture, or significant discoloration," Vaccaro said. "However, appearance alone isn’t always reliable. Ground beef can look normal and still be unsafe if it’s been stored too long, so time and temperature matter more than appearance. When in doubt, it’s safest to throw it out."

Is that glass of water from yesterday still safe to drink?

Dr. David Dyjack explains how water left out overnight can collect microbes from the surrounding environment over time, especially when exposed to heat, sunlight or repeated handling.

“If it’s been sitting out for more than a day, it’s safer to refresh than to guess,” Dyjack said.
