Be excited about some of these Guatemalan coffees. This, for instance, is a double fermentation experiment of yellow (it darkens considerably while drying) Typica coffee at El Aceituno. After being harvested, the coffee is left to start fermenting in the cherry for 48 hours, then moves to raised beds for the traditional natural process of drying.
