My term as childcare center cook has ended! Rosie is back and all is right with the world. Today's menu was banana bread and strawberries for breakfast. Honestly, that banana bread recipe is pretty bad. Whole grains, not much sugar...and not much fun. Healthy, I am sure. Maybe we can come up with something that is healthy AND delicious. Suggestions are welcome. Lunch was tostadas-you know, beans, lettuce, tomato, cheese. We did make the beans from a bag of dry pintos. Cooked them with onion, garlic, peppers, and celery (because I had celery leftover from the chicken salad)..then mashed them up to spread on the tortillas. This was good for me. I have a finer appreciation of child care workers, especially the cooks! And I met adorable Enid children-our hope for the future. Back to the grindstone for me. Lots of writing and organizing.

Our durable medical equipment loan closet is out of wheelchairs, bathtub chairs, and rolling walkers. We would love to have any that are taking up closet space. Just bring them to us at the Nonprofit Center, 114 S. Independence, Enid. We'll loan them out to people who need them. Thanks!

Second day as fill-in cook at the Early Childhood Center. Tomorrow is my last day. And, I have to say that I am looking forward to going back to my real job. But, I go back inspired! We made breakfast pizza today. That involved flat bread, cream gravy, eggs, peppers and cheese. I beat up 45 eggs, added chopped red peppers, poured that into a big oiled baking sheet pan and stuck it in a 350 degree oven. Then I crisped up some flatbread in the oven and made some cream gravy. Once the flatbread was crisp, I cut it in squares (probably should have done that before i crisped it up because it crumbled). Once the eggs were almost set, I covered them with sliced cheddar. When the eggs were done, I took them out and cut them into squares. Spread some gravy on the flatbread squares, top with the egg squares. Voila!

Thought you might like the CDSA Childcare Center recipe for tomato soup: Saute' a chopped onion in a little oil. Add two large cloves of minced garlic and stir until softened. Put two large cans of diced tomatoes in a blender and add in the onion and garlic. Puree. Put it back in the pot. Pour in one large container of tomato juice. Season with salt, pepper, and basil to taste. Simmer. Add one pint of heavy cream just before serving. I was amazed today to watch little kids spoon this up and even dip their grilled cheese sandwiches in the soup. We also served sliced oranges-which were popular-and lots of 1% milk, which everyone drank. I also learned how to make yogurt/banana pops for afternoon snack. No sugar...still loved by the kids. We have room for your kiddo.

Good morning. It's good to be together after such a stressful evening. But, we are concerned about our neighbors. All CDSA staff stand ready to help. We just need an assignment. I think that's how most of Enid feels right now. Sending our love and support to people who suffered losses last night.
