Happy National Bourbon Day! 🥃 Here's a question for Bourbon distillers: how consistent is your char level from barrel to barrel? Most cooperages control char by time — but all wood is different, charring by time can produce inconsistent results. We love when a decade of hard work gets the recognition it deserves — and that's exactly what's happening with Albany Distilling Company and their limited release: Ironweed Straight Rye Whiskey, aged 10 years in Adirondack Barrel Cooperage barrels. 🥃

Ten years ago, our team handcrafted barrels for John Curtin at ADCo to fill with his finest Rye. Since then, those barrels have been quietly doing what they do best — slowly giving the whiskey its complexity, color, and character.

Kiln drying changes how sugars are distributed in the wood, which negatively affects flavor development during aging.
