The deep snow blanketing the Midwest prairie didn't bother the bison on Ed Eichten's ranch one bit. The hardy animals evolved to survive — even thrive — year-round on the open range, and with their big heads, they can plow right through drifts 5-feet tall or more.

Butter Basil Steak Sauce

1/2 cup heavy whipping cream
1/2 stick of butter
8-10 leafs of fresh basil
Salt and pepper to taste

Reduce to thick sauce.

For Poultry and Fish: add white wine, garlic, and juice of large lemon.

Beer Balsamic Salad Dressing (all our fans love beer)

¼ cup Amber Ale or Indian Pale Ale, room temperature
2 tablespoons Balsamic vinegar
1 tablespoon honey
½ cup extra virgin olive oil
2 cloves garlic, minced
1 teaspoon fresh chopped basil, or dried
¼ teaspoon lemon pepper
1/8 teaspoon salt

Directions: Mix in a blender.

Great side dish for buffalo burgers...

Corn Basil Blueberry Salad

2 cups corn
1 cup blueberries
4-6 leaves of fresh basil, cut into thin strips
2 T olive oil
Sea salt to taste
splash of white and/or squeeze of lemon.

Hint: grill corn on the cob just enough to add flavor then cut corn off cob.

Homemade Prairie Burgers

*The best tasting burgers!*

1 lb. Ground Buffalo
1 Tbsp. Italian Bread Crumbs or crushed Saltine Crackers
1 Tbsp. chopped onion
1 egg
salt & pepper to taste

Mix the above ingredient. Shape into 3-4 patties. Place on a hot grill, close the lid and turn down to medium. Cook approximately 5 minutes on each side, until internal temperature reaches 160 degrees F.
