Yield: About 7–8 half-pint jars
Ingredients
Crust
* 2 cups graham cracker crumbs
* ⅓ cup melted butter
* 2 tablespoons brown sugar
Cheesecake Filling
* 3 (8-ounce) packages cream cheese, softened
* 1 cup granulated sugar
* 3 large eggs
* 1 teaspoon vanilla extract
* ½ cup sour cream
Topping
* 2–3 cups fruit pie filling or your favorite homemade fruit topping (cherry, strawberry, blueberry, etc.)
Instructions
1. Preheat the oven to 325°F (163°C). Prepare clean oven-safe canning jars.
2. In a small bowl, combine the graham cracker crumbs, melted butter, and brown sugar. Press a thin layer into the bottom of each jar.
3. Beat the cream cheese until smooth. Add the sugar and vanilla, then mix in the eggs one at a time. Fold in the sour cream until fully combined.
4. Divide the cheesecake filling evenly among the jars, leaving room at the top for the topping.
5. Bake until the centers are just set, about 22–28 minutes for half-pint jars.
6. While the cheesecakes are baking, gently warm your fruit topping of choice.
7. Remove the jars from the oven and carefully spoon the warm topping over each cheesecake, leaving about ¾–1 inch of headspace.
8. Wipe the jar rims with a cloth lightly dampened with white vinegar. Apply the lids and bands, tightening them fingertip tight.
9. Return the jars to the warm oven for 8–10 minutes for half-pint jars or 12–15 minutes for pint jars.
10. Remove from the oven and allow the jars to cool completely before storing.
Storage
Refrigerate for up to 1 week, or freeze for up to 2 months for the best quality. Thaw overnight in the refrigerator before serving.
Note: These are not shelf-stable. Always store in the refrigerator or freezer.
