🎶 What a GREAT time we had this Sunday! 🎶We headed out into the community to support our amazing bus driver, John, who is also a talented musician in TWO bands! 🤩 We went to see the Rewind Band at Seminole Casino and had a blast with great music, good food, a little gambling, and even better company! 🎰🎸❤️And of course, wherever we go, we always make new friends! 🥰 That’s just what we do! We love getting out, making memories, and enjoying life together! What a Sunday! 🙌

🧠💙 What a great time at HCA Florida Lehigh Hospital! 💙🧠
We were excited to attend their presentation and open house celebrating the new stroke unit! The information was incredibly valuable, and we’re so happy to see this important addition coming to our community. 👏🏥
Some of our amazing team members and residents came out to show their support—and HCA Lehigh treated everyone to a delicious lunch! 🍽️❤️
It was a wonderful day of learning, connecting, and supporting healthcare in our community! We’re proud to be a part of it! 🙌

Crispy, golden, and wonderfully satisfying, these Corn and Zucchini Fritters are a late-summer favourite that comes together in under 30 minutes. 🌽 Packed with fibre, vitamins, and plant-based goodness, they make a nourishing light meal or snack that supports digestive health and sustained energy in older adults.

Ingredients
🌽 2 medium zucchini, coarsely grated
🌽 1 cup corn kernels, fresh or thawed from frozen
🌽 2 large eggs, lightly beaten
🌽 1/2 cup plain flour or chickpea flour
🌽 1/4 cup grated parmesan
🌽 2 spring onions, finely sliced
🌽 Salt and pepper to taste
🌽 Olive oil for frying
🌽 Greek yoghurt or a squeeze of fresh lemon to serve

Instructions
✅ Place the grated zucchini in a clean cloth or paper towel and squeeze firmly to remove as much moisture as possible.
✅ In a large bowl, combine the zucchini, corn, eggs, flour, parmesan, and spring onions.
✅ Season with salt and pepper and stir until everything is well combined.
✅ Heat a thin layer of olive oil in a non-stick skillet over medium heat.
✅ Drop heaped spoonfuls of the mixture into the pan and flatten each one gently with the back of a spoon.
✅ Cook for 3 to 4 minutes on each side until golden and cooked through.
✅ Transfer to a plate lined with paper towel and repeat with the remaining mixture.
✅ Serve warm with a spoonful of Greek yoghurt or a squeeze of fresh lemon. 🌿

Yesterday’s Chef Demo was a HUGE hit! 👩‍🍳💚 With August being Wellness Month, our chef whipped up some delicious and nutritious bowls—Oriental, Quinoa & Brown Rice! 🌱🥢Our residents got to taste-test and give their feedback, and let’s just say… they approved! 🙌👏 These tasty, healthy bowls will soon be making their way onto our daily menu! 🎉
Who says healthy can’t be delicious?! 😋💚
