Crispy, golden, and wonderfully satisfying, these Corn and Zucchini Fritters are a late-summer favourite that comes together in under 30 minutes. 🌽 Packed with fibre, vitamins, and plant-based goodness, they make a nourishing light meal or snack that supports digestive health and sustained energy in older adults.

Ingredients
🌽 2 medium zucchini, coarsely grated
🌽 1 cup corn kernels, fresh or thawed from frozen
🌽 2 large eggs, lightly beaten
🌽 1/2 cup plain flour or chickpea flour
🌽 1/4 cup grated parmesan
🌽 2 spring onions, finely sliced
🌽 Salt and pepper to taste
🌽 Olive oil for frying
🌽 Greek yoghurt or a squeeze of fresh lemon to serve

Instructions
βœ… Place the grated zucchini in a clean cloth or paper towel and squeeze firmly to remove as much moisture as possible.
βœ… In a large bowl, combine the zucchini, corn, eggs, flour, parmesan, and spring onions.
