Here are some tips on how to make homemade chili with dry beans...
▪️Start out by soaking your beans overnight. Then dry and rinse them before cooking. (If you forget this step, not to worry, there is also a quick soak method....Rinse the beans, put them in a large pot with the water at least a couple of inches above the beans, turn on the burner and when it starts to boil, allow them to boil for 2-3 minutes, take them off the heat, place a cover over the pot and let soak for an hour. After that hour drain them and run under cool water and they are ready to be tossed in the chili)
▪️Cook the beans seperate from the other ingredients to prevent the acid from the tomatoes making the beans tough. Simmer and cook for 45 minutes to 2 hours.
▪️In a large pot, brown the meat/meat substitute. Add in some diced onions and garlic for a little more flavor. Then stir in your diced tomatoes, tomato sauce, a little bit of celery, maybe some jalapenos if you like it a little spicier and any spices that you love. The possibilities are endless! Then add your bean mix and enough water to make sure that everything is covered.
▪️Bring your masterpiece to a boil, reduce your heat and let simmer for 1-2 hours. You can also throw it in the crock pot before you go to work on low and have a delicious supper ready to go when you get home!
