OENOSTAVE—our unique 18mm tank staves come in French oak (new option: Extended Age for M and M+) and Exception FO, as well as American oak

For adding oak without oaky aromas Exception staves boost volume and highlight fruit, with good results in balancing out guaiacol impact … 3g/L dosage for four weeks improves fruitiness, softens tannins and amplifies overall mouthfeel

ICÔNE oak wood is set apart at the cooperage early on, selected from chemical analyses of wood’s extractable substances and oenological potential

On the American oak side of the ICÔNE range, the Low Aroma barrel discretely provides olfactory complexity and a gentle oak profile … differing from traditional American oak profiles by its absence of strong smoky and coconut notes

146 years ago it was possible to place an order for an oval foudre on July 31st for October availability

These days require a little more leadtime, though we do have some stock barrels for the upcoming harvest 2026

As we approach late July and an early harvest on the West Coast … offering a quick reminder about OENOFIRST: our French oak alternative product for the crushpad and fermentation

The bricks (1-2 bricks/ton of grapes) disperse after a few minutes of juice contact, improving aromatics/structure and brightening fruit

OENOFIRST comes in two recipes: R01 incorporates toasted and untoasted oak, offering aromatic maturity and mouthfeel, along with stable fruity sensations, volume and length on the palate. The untoasted oak of R00 is more effective for color stabilization, due to higher tannin levels
