February 9th is National Pizza Day, and we are recognizing the scientific marvel that is MRE Pizza!
After literally years of research and development, the DEVCOM Soldier Center’s Department of War Combat Feeding Division at Natick created MRE Pizza, the world’s first shelf-stable pizza. The pepperoni version was included in MREs starting in March 2018, specifically Menu #23.
CFD food scientists used a combination of ‘hurdle’ technologies (water activity, pH and unique military packaging requirements) to address numerous technical challenges associated with the development of MRE Pizza, resulting in a shelf life of 3 years at 80F without the need for refrigeration. The picture with the silver foil packaging is an early prototype from the late 1980's.
