Honey-Glazed Acorn Squash with Creamy Goat Cheese and Cranberry Drizzle
Ingredients:
• 1 medium acorn squash (about 700 g / 1.5 lb), halved and seeded
• 2 tablespoons olive oil (30 ml)
• Salt and black pepper, to taste
• 100 g (3.5 oz) Brie cheese, sliced
• 2 tablespoons honey (40 ml)
• 1/4 cup cranberry sauce (60 g), preferably whole-berry
• 1 tablespoon fresh thyme, chopped (optional)....

there is a wonderful little pop-up gallery along overlook Road. It is simply magical. It is housed in historic barn. Once you arrive, your senses are inundated with a multitude of pleasures. The smell of fresh cut grass, beautiful flowers, lovely orchards, and a beautifully restored barn with gentle and inviting music wafting through it. Such a delightful experience. I highly recommend.
